Better than Olive Garden Pasta e Fagioli Soup | Household Favorite

    Ingredients
    2 Tbsp olive oil, divided
    1 lb lean ground beef
    1 1/2 cups chopped yellow onion
    1 cup diced carrots
    1 cup diced celery (did not use)
    3 cloves garlic, minced (1 Tbsp)
    3 (8 oz) cans tomato sauce
    2 14.5 oz cans low-sodium chicken broth
    1/2 cup water, then more as desired
    1 (15 oz) can diced tomatoes
    2 tsp granulated sugar
    1 1/2 tsp dried basil
    1 tsp dried oregano
    3/4 tsp dried thyme
    1/2 tsp dried marjoram
    Salt and freshly ground black pepper
    1 cup dry ditalini pasta
    1 (15 oz) can dark red kidney beans, drained and rinsed
    1 (15 oz) can great northern beans, drained and rinsed
    Finely shredded Romano or Parmesan cheese , for serving
    3 Tbsp minced fresh parsley
    ***My additions...
    1 tablespoon Onion Powder
    1 tablespoon Garlic Powder
    Instructions
    Heat 1 Tbsp olive oil in a large pot over medium high heat, crumble in ground beef and cook, stirring occasionally until cooked through.
    Drain fat from beef then transfer beef to a plate, set aside. Heat remaining 1 Tbsp olive oil in same pot.
    Add onions, carrots, and celery and saute over medium-high heat until tender about 6 minutes, add garlic and saute 1 minute longer.
    Add chicken broth, tomato sauce, water, canned tomatoes, sugar, basil, oregano, thyme, marjoram and cooked beef then season with salt and pepper to taste. (+onion powder and garlic powder)
    Bring to a boil then reduce heat to medium-low, cover with lid and allow to simmer, stirring occasionally, until veggies are soft, about 15 - 20 minutes.
    Meanwhile prepare ditalani pasta according to directions on package, cooking to al dente.
    Add cooked and drained pasta to soup* along with kidney beans and great northern beans. Thin with a little more broth or water if desired.
    Allow to cook 1 minute longer. Stir in parsley, serve warm with grated Romano or Parmesan cheese.

    Pro Tip: Sautee vegetables in the fat from the ground beef when it's halfway cooked, that's how the Italians do it. There's no need to remove and drain.

    Looks amazing. I have finally perfected their soup after 20 years of trying. Can I mention cooking the ditali pasta separately, putting it in your serving bowls, and then pouring the soup over them before bring the bowls to the table. That pasta will suck up all your soup liquids even if you cook it first. This is my favorite soup. You have the closest recipe of any copycat in the past 20 years. Congrats.

      Yep. This is how I do it. Plus, I love to save this. If you put the noodles in it, they get soggy and mushy. Keep them separate and just heat up the soup. Put some cold noodles in a bowl. The soup heats the noodles. The noodles cool the soup. It’s perfect.

    Perrfectto.. I have my dried beans in the instapot for 25 mins right now and I cant wait for dinner, lol... The only thing I did different is I'm using Italian sausage instead of beef

      I have never used ground beef in mine only sweet Italian sausage. I was just curious how others made it,but it’s basically how I have always made mine. My recipe is from my Italian father and grandmother who was born in Sicily. I’m debating on adding some ground beef to one pot just to see how it adds to the flavor although it’s a family favorite with just sausage for decades now!

    I think I will try making this delicious soup! She made this recipe very easy to follow, and I want to thank her for it. But I think I want to add pinto beans and also either great northern white beans or navy beans from the can... great idea, just a little adjustment...

    This was very VERY good, and it seems to get better every day I have it as leftovers. I used celery, but next time I think I'll dice them and the carrots a bit smaller. I'm also gonna sub the parsley with green onion because i just don't really like parsley, and I think green onion will work really well in this dish.
    I was considering trying a different tomato sauce next time (I used Hunt's) and maybe using beef broth instead of chicken, but the more i eat this the more I enjoy it, so I think I'm gonna leave it as-is for now.

    Okay, so I've added ditalini pasta to my shopping list. I made the mistake of watching this video while hungry, and now I can't get it out of my mind.
    I'm psychologically incapable of following a recipe precisely, so I'll probably leave out most or all of the sugar. But I can't wait to try this.

      A BETTER ALTERNATIVE TO RAW SUGAR IS TO USE MORE CARROT IT HAS NATURAL SUGAR IN IT SO NOT ADDING GRANULATED SUGAR. I'M A CHEF AND I DONT USE SUGAR EVEN IN ITALIAN "GRAVY" AKA PASTA SAUCE. USE PLENTY OF CARROT YOU WONT NEED THE SUGAR. I'M ALSO DIABETIC. 👨‍🍳👨‍🍳👍👍👍

    Pasta e fagioli is not actually a soup and some people do use red kidney beans but I would never.

    I would think urinating in a pot is better than anything from Olive Garden. It’s a joke to call that Italian. Why is there ground meat in the soup? If this is how the soup in Olive Garden then it just proves what I wrote. A few ingredients is all it takes, lard, carrots, onions white beans, the soaking liquid, the pasta. What you made is a minestrone, and a Fugazy one at that.

      True, it's not authentic. But Olive Garden isn't authentic anyways, never has been. I truly love going to a true Italian family restaurant but I can say this soup is pretty good. I remember making this and finding the recipe for the authentic one and, honestly, the authentic recipe surpasses this one by far. Although I will still make this one simply because family members do enjoy eating it. Just as long as I can feed my family and try new things while cooking I'm happy for any video or advice people are able to share about cooking.

    Once again, a recipe with measurements that all start with "SOME or A Little." No other measurements given. Are you too lazy to actually share exact measurements? I think so. No one could this properly. Many people say your voice is soothing. Well, darlin' a soothing voice doesn't help anyone if you are too lazy to actually give proper measurements.
