Ingredients:
1.25 cups cooked chopped chicken thighs ( i boiled about 10 oz if boneless skinless chicken thighs until cooked and then chopped up)
1 cup shredded carrots
1/2 cup chopped celery
2 minced garlic cloves
1 diced onion
1.5 cups baby spinach
1/2 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp nutmeg
1/2 stick unsalted butter
1 tbsp olive oil
1/4 cup all purpose flour
16 oz gnocchi ( you can find in pasta isle at your local grocery store )
1 qt half and half ( or you can mix half milk half heavy cream)
32 oz chicken broth
1/2 cup Parmesan cheese
Made this tonight, was even more flavorful then Olive Gardens version. Only change I made was 1 pint of half and half and 1 pint of heavy cream, this allowed for a slightly thicker soup then found at the restaurant. I will definitely be making this again.

After, I decided to watch several other videos making Gnocchi soup and happy to admit that your video was far superior than the rest of them!!! Made this for dinner last night and me and my husband loved it. Next time we will add more chicken and more carrots. The spices were perfect.

I just tried your recipe it was delicious. I dont like gnocci so I substituted that with 3 large diced yellow potatoes. I used a mixture of heavy cream, half and half, and milk. I also used grated parmesan cheese, not the fresh kind because that's what I had on hand.
I finally made this… it’s awesome!! I’m never buying it again! THANK YOU! I used 1/2 an onion & chopped the spinach.
Made this soup tonight for dinner.. found all the ingredients at Trader Joe’s it came out sooooo good and my toddler (2) who is a picker eater loved it !! Thanks 😊

Just made it, and it was delicious- not exactly like Olive Garden’s, but it’s pretty similar, I’d make it again🙏🏼 awesome recipe. I doubled the recipe, and added a little extra chicken, and not as much spinach… also side note, why are people even bothered by the way she says “gnocchi”?? That’s so silly 💀

Won’t taste weird but it will be much thicker. I’d lighten up on the flour for the roux and add your Parmesan when you’ve done everything else.

Soup is the healthiest food there is, but overeating anything is unhealthy
If you don’t have chicken stock, when you boil the chicken, season it as if you were making chicken stock. You are essentially making chicken stock when you boil chicken with salt and garlic powder. It might even taste better making it that way.
That’s closer to a chx broth, chx stock along with all stock incorporates the bone when cooking and has a tremendous amount of flavor. Chx stock is where’s it at IMO.

You can skip the flour and cook the gnocchi right in the soup-it will thicken perfectly
So would I put the gnocchi in at the time I would put flour or at the same time I put chicken in?

If you precook the gnocchi and continue cooking after you add it to the soup it gets mushy. Also, recommend steaming the carrots and celery for a few minutes before adding to the soup.

I've come back to this video 3 times now. First 2 times i made it and loved it. Now I'm moving to my first apartment next week and I'm makimg dinner for my friends helping me move. This soup is always a winner.
I recommend this with a glass of wine and a Caesar salad. Make your own dressing and croutons!

So I tried this and mines didn’t go well I messed up and added all the flower which made it a lot more clumpy and less soupy. I’m gonna try it again soon and this time I’m going to slowly add flower until it’s just a little thick not that much thick as last time

I'm extremely excited and will update on how the soup turns out. (This was my favorite thing to eat at the olive garden but due to corona I don't go out to eat anymore). update: I made it, and my family LOVED it (and they're not always the easiest to please). I couldn't have asked for a better response, and I feel so proud. The only thing I did differently is that I used 1/2 of onion rather than a whole one, and didn't use any garlic because my mom gets sick from it. It tasted nearly identical to the one at the Olive Garden, I'm so delighted because now I can make it VS going there.

Add whole milk instead of half and half and it still turns out perfect; add some more flour to thicken

I really enjoyed your video on the chicken gnocchi, soup and I am looking forward to making that for myself. I did have a question though I don’t know that Olive Garden puts onion in their soup. Is this the recipe of Olive Garden soup or just a similar recipe?
I really like this recipe except for the nutmeg, I just put a dash because nutmeg is a very strong spice and half a teaspoon would overwhelm this dish!

If the gnocchi only takes a few minutes to cook can I just add it in at the same time that you did and it will just cook up in the soup’s broth? Just wondering if I can cut the extra step out of cooking it separately 😂
Made this last night. It was bland. I followed recipe amounts. Tested it out on my kids. They thought it was bland. I added a little more salt and it greatly improved the taste. Also added just a bit more cheese and my kids thought it was better. Thank you for the recipe and demonstration.
You can always use salted butter instead of the unsalted since you preferred it that way. And I tend to add dried cilantro to most of my recipes, so maybe that will work in this recipe as well 🙂

I have a quick question..can you not cook the gnocchi in the soup mixture Right before you add the spinach? Why cook it first in the water?
If you make a rue with the flour, butter, and oil it will thicken. If you add the potato uncooked it will be too thick due to the extra starch from the potatoes thickening it further. Pick one or the other. Also, make sure to cook that flour well and if you need to thicken it more at the end just add some corn starch and cold water.

When I was first introduced to gnocchi, they looked like maggots lol. But now I love them and cook them when I make soups/stews.
This is hands down the best chicken gnocchi soup. Just made it and it's delicious even better than olive garden. My only suggestion to anyone who's never used gnocchi is just cook it in the soup don't pre cook it. Otherwise follow the directions and you won't be disappointed. Thank for sharing 🙂

Have you ever tried this without boiling the gnocchi separately? I was hoping to get away with using one pot LOL! I'm not sure if the gnocchi will be mushy or the texture might be weird to just throw into the soup and cook like that ....hmm...
