    Ingredients:
    2 medium size white onions diced
    3 cloves garlic diced
    1/2 thumb size ginger diced
    2 carrots sliced round
    1 yellow bell pepper
    1 orange bell pepper
    1 13.5 oz (400g) can chopped/diced tomatoes
    1 13.5 oz (400g) can coconut milk
    3 tbsp curry powder
    1 tbsp coriander powder
    1 tsp garam masala
    1/2 tsp turmeric powder
    1 tsp cumin powder
    2 tsp salt
    3 tbsp desiccated/shredded coconut flakes
    2 tbsp ground almonds
    2 tbsp maple syrup
    2 can chickpeas (500g total)
    2 handfuls baby spinach
    1/4 cup cilantro (garnish)
    Sliced almonds (garnish)
    Method:
    1. Boil the bell peppers & carrots for 20 mins until soft.
    2. Saute the onions until brown along the edges then add garlic & ginger. Saute for 1 min.
    3. Add the boiled bell peppers & carrot s, chopped tomatoes, coconut milk, curry powder, coriander powder, garam masala, turmeric, cumin, salt, desiccated coconut flakes, ground almonds, maple syrup to a blender.
    4. Blend until smooth consistency
    5. Add blended sauce to pot with onions, etc. and turn to high heat.
    6. Add in any vegetables you may have & beans if you like. If using canned beans/veggies/spinach just enough to wilt spinach.
    7. Garnish with chopped cilantro & sliced almonds

      Does anyone know how to copy and paste this on an iPad? I can do it from a website, but this recipe still isn’t there. I don’t want to write it out by hand!

    1 Tbsp oil
    2 medium sized onions

    2 tins drained chickpeas
    2 large handfuls spinach
    1 tsp salt
    Some coriander
    Sauce:
    1 yellow pepper
    1 red pepper
    2 carrots (pre-boiled 20 mins)
    1 400ml tin chopped tomatoes
    1 400ml tin coconut milk
    3 Tbsp curry powder
    1 Tbsp ground coriander
    1 tsp garam masala
    1/2 tsp ground turmeric
    1 tsp ground cumin
    1 tsp salt
    3 Tbsp dessicated coconut
    2 Tbsp ground almond
    2 Tbsp maple syrup
    * Toasted sliced almonds for garnish

    Just made this deliciousness and it was sublime!!!! Best korma I’ve ever made and tasted. Even my 3 year old lapped it up and that’s a huge achievement.
    Thank you guys...you’re the best! Been plant based for 1.5 years and followed your recipes since day one. Each recipe is getting better and better and love that this takes no time at all, which is amazing for an authentic curry.

    Your vegan recipes are my inspiration! I have veered off the recipes without big disasters, for instance, substituted half of the onions with a leek which was leftover from something else, or used a bit of my homemade garlic and ginger paste instead of crushing the spices separately. It works just fine.
    And here is my tip for umami flavor: I use Maggi, a great spice from my childhood in Germany. Mexican chefs use it and so do Indian chefs. It makes everything taste better, from soups to stews.
    I am so glad to have found you on UA-cam.

    Oh my goodness I just made this and it tastes amazing 😋😋. I added curry leaves & used cauliflower, French green beans, corn, sweet peas as my veggies. I didn't add the chickpeas/spinach. Thanks so much for this recipe🤗

    I made this a couple of nights ago - the sauce was OMG DELICIOUS! THANK YOU for at last giving me the korma recipe I've been looking for for years and thanks to Santan and his father for sharing it.
    I didn't have the peppers, and I used root curcumin instead of turmeric, and it still tasted wonderful. I'm going to make the sauce with mushrooms or vegetables instead of chickpeas next. This recipe is a keeper! Thank you twins!

    Thanks for sharing this simple recipe! It's my favourite vegan recipe by far and it's perfect for meal prep. I just cook 250 g dried chickpeas with the pressure cooker beforehand because they taste WAY better than the canned ones.

    ingredients list
    pan high heat
    - 2 medium white onions
    - 3 cloves of garlic
    - half a thumb size of ginger
    blend
    - 2 carrots, boiled
    - 1 yellow pepper, boiled
    - 1 red pepper, boiled
    - 1 tin chopped tomatoes
    - 1 tin of coconut milk
    - 2 tbs maple syrup
    - 3 tbs curry powder
    - 1 tbs ground coriander
    - 1 tsp garam masala
    - 1/2 tsp turmeric
    - 1 tsp ground cumin
    - 1 tsp salt
    - 3 tbs desiccated coconut
    - 2 tbs ground almond
    add back into pan
    - 2 tins chickpeas
    - 2 large (60g) baby spinach
    top with
    - chopped coriander
    - season with salt and pepper (1 tsp salt extra)
    - toasted flaked almonds

    This was incredible! I didn't even get to put spinach or coriander/cilantro in it because I started eating it out of the pan. PAIR THIS with roasted cauliflower covered in a blend of cumin seeds, coriander, garlic powder and nigella seeds/onion seeds for the perfect accompaniment. Awesome!

      You could maybe add a 100g of Cream instead of Coconut Milk and take the spices from a Chicken Tikka Masala Gravy
      or omit most of the spices and add Thai - Red Curry Paste

    Looks great (even though no Tamari, lol). On the one hand - I already made 3 dishes without recipes - as per your challenge - and they came out yummy (no oil) except that the first one was so HOT! On the other hand - recipes are great - otherwise there are countless ideas we could never come up with. Keep em' comin'!

    Love your amazing dishes. Is there a substitute for coconut milk in curries and korma for people who don’t like the taste of coconut milk. Can you use almond or rice or even oat milk?

      Those should work. Or you could grind in a handful of cashews as we do in Indian cuisine - it'll be creamy and rich, just like coconut milk. :)

    2 white onions chopped
    3 cloves garlic
    1/2 thumb size ginger grated
    2 tuna chickpeas rinsed
    60g washed baby spinach
    Chopped coriander
    Sauce (blend all)
    2 carrots pre boiled
    One red and one yellow pepper
    Tin chopped tomatoes
    Tin coconut milk (full fat makes it creamier)
    3 tblsp curry powder
    1 tblsp ground coriander
    1 tsp garam masala
    1/2 tsp tumeric
    1 tsp cumin
    1 tsp salt
    3 tblsp dessicated coconut
    2 tblsp ground almonds
    2 tblsp maple syrup
    Fry off the onion firstly before adding ginger and garlic until golden. Take off the heat.
    Make the sauce.
    Add sauce onto pan and bring back into heat.
    Add two tins chickpeas
    Add spinach
    Add chopped coriander
    Taste and add more seasoning if required
    Serve with toasted flaked almonds.

    For someone jmusing ground ginger and ground garlic. What measurements would you use. I used 1/8 tsp for each clove of garlic and 1 tsp ginger. Dont think it was right, though

    Seems a little spartan with the quantities of spices, but there's no reason not to double/triple/quadruple them to taste. As an omnivore I think I may have to try this at some point soon as I like everything that's gone into it. Great job lads!

      It would freeze fine, a shallow tub or dish would be great to freeze it with because it would defrost and cook quicker. 😄😄

    I’v defs dome this before!!! IT’S DELICIOUS!!! Carrots, peppers, blended into sauce - like a magical secret to a magical.. secret... DELICIOUSNESSS... 😁😅 - gives a nice thickness and extra flavour to whatever’s cooking. You guys have taught me well 😏😁 Also whenever we make any of your recipes, we do so without oil and it works wonderfully. 😁😁👌🏻

    I wanna increase the spices. How do I that...just double everything that was on the 'spice plate' almond and coconut included, or will that overwhelm everything....or just up the cumin so it's hotter? I have no idea. ADVICE ANYONE?

      Up the garam masala or add chilli powder. Cumin won't add much heat.

      We do, it gets the cooking temperature in the pan up higher than without oil and adds more char/flavour to the food. It's not essential though. 😄😄
