Great video to show how to convert to the Ellsworth grind. Until this video though, I never saw anyone do the same grind on a roughing gouge. I have an extra roughing gouge and will do this to it. Thank you!

That gouge was not an English grind bowl gouge. It was a spindle roughing gouge. It is intended for use only on spindles where the woodgrain is parallel to the lathe axis. To use it inside a bowl is, as you remark, asking for a catch.
Another point: at around 8 minutes in we can see you approaching the final shape. You don't seem to realise that it is important that the point on the flute edge that you are closest to grinding must be horizontal, and therefore parallel to the grinder axis. The easiest way to ensure this is to glance at the top edge of the platform. Make sure the wing edge that you are closest to, or actually grinding, is exactly parallel to the edge of the platform. Otherwise you will not get the correct bevel angle all the way round. Constantly adjust the relative amounts that you are twisting and turning the gouge to achieve this.

40 or 50 years ago this was called the Irish grind.. Because it was hard to do the English grind prevailed.. Go read Peter Child…. A turner and writer who published the English grind 50 years ago.. Production turners used the English grind.. Peter Child is English.. a simple jig could be made where the English grind is used by just twirling the tool on the grinder.. This is much like the Wolverine tool that hold the gouge at the base.. and is repeatable.. There are references in Fine woodworking from years ago about Peter Child too.
