Having operated a food truck in Iowa for multiple years with many of you might not be thinking about in your comments on pricing is the cost of parking that food truck. Very few cities just allow you to roll up and start selling. Maybe will have a yearly registration fee that can range into the hundreds or thousands of dollars. Even if I were to pull up to a private companies parking lot, with their permission, I still have to have the city registration paid. Yes, food trucks have a advantage over a brick and mortar establishment, but there are plenty of extra cost hidden in there as well .

i get the hate, being from a food truck town there are a few things i respect about food trucks. One is that they are willing to try crazy things, that no brick and mortar would ever risk, and two you almost always get face time with the owner and most want to be sure you enjoy the effort that went into making the food.
I would think the banana would be worth it because it’s not just a 26 cent banana you’re getting, it also has chocolate, nuts and drizzle bits. I would pay $10 for that dessert here and be happy.
Roy Choi is a legend and I think Koji showcases that. I went to Best Friend in Vegas and I was blown away. He knows what food needs to elevate it and how to price it. Great experience all around.

I also assumed that's why they serve it that way, much like in the old days, Slurpees were served with straws that were spoon-shaped on the end: so you could slurp OR scoop. 😁 And while I agree that a wooden, bamboo, or even compostable spoon would be a more eco-friendly option, those spoons cost a lot more than plastic (polypropylene) ones (at least 2-4 times as much), so that would really drive up the cost of their product, which is already pretty pricey.

I have to admit that I LOL'd at that frozen banana, because chocolate dipped bananas (along with other chocolate coated fresh fruits) are traditional German Christmas market fare (although those are not specifically frozen). Was your banana frozen with all the coating and sprinkling already on, or were the toppings freshly added onto a frozen banana when you had placed your order? Inquiring minds want to know.
To be fair, it costs more to make a frozen banana than it does a cupcake. Also Bananarchy uses fair trade ingredients and their spoons are compostable.
One food truck I would of highly recommend is Rosita’s on riverside. They have the best al pastor tacos imo and always recommend anyone new to Austin to give it a try!

I feel like you and others in the comments don’t understand how the supply chain part of business works and that when you purchase more and in bulk it’s generally cheaper for the restaurant aka cheaper prices for the food. I’m mostly calling you out for the Italian one because it wasn’t expensive at all to me for the pasta dishes. Why do you think just because it’s in a food truck it should be cheaper? Sure cost of location is cheaper but again food costs are more and in general prices are extra high right now. I say this with all kindness as someone with two business degrees who worked in supply chain (for pharma though) but I also have a former restaurant manager dad so I have a pretty good understanding of all the pieces that go into it.

Also, unlike a chain restaurant such as McDonald's or Olive Garden, since their focus is on fresh, upscale offerings, they undoubtedly use far more fresh ingredients and far less frozen ones. To that end, it's unlikely they have their own dedicated food suppliers like the chains do. That also doesn't take into account the loan for the truck, insurance, gas, and rent for wherever they're set up (unless the land owner is allowing them to park and sell for free on their property). There can be a lot of "hidden" costs associated with products sold by a food truck. Take, for example, the polypropylene spoon protruding from that frozen banana. It would be much cheaper to just serve it on a wooden stick. But they chose to give patrons the option to either eat their product as though it's on a stick OR to pull out the spoon and eat it using the utensil. That's a clever and thoughtful idea, but it unfortunately costs more to implement, which is typically passed on to the customer.

My fave food truck ever is a Vietnamese truck where you can get HUGE spring rolls for $3 each. and they are GIANT. Three of them is a full meal, and they are actually heavenly. I dont think ive ever spent over $15 there on one order (tons of spring rolls, a drink, and marinated shrimp) and lowkey, it ruined every other food truck for me, its that good and well priced. No one will ever compare, genuinely best food in a 50 mile radius, maybe more
Most food trucks are started by people who really don't have any experience in cooking. They just want to be part of the craze. As you say, 99% of food trucks offer pricey, low quality food with long waits. I've never had anything from a food truck and thought, "whoa this is incredible."

You should really visit Nashville’s food trucks! Do your research before going to a truck because some aren’t the best. Food truck prices are so steep because most are small businesses that need extra money to get by, but the advantage is that they will always care extra for their customers and their products.
I suspect their prices are high mostly because their overhead is high. Owning a food truck might be cheaper than owning or renting a brick & mortar location, but it still involves the cost of a loan note, gas, insurance, cost of renting space in a commercial kitchen for food storage and prep (TCS foods can't be stored on a truck), employee labor, site rental (unless they have an agreement with a land owner to park and operate on their property for free), etc. And since the premise of most food trucks is that they present fresh, upscale food rather than mass-produced items, their food costs end up being higher than a typical fast food brick & mortar, which results in higher cost passed on to the customers.
My first time trying Mexican street corn was at a food truck in Las Vegas and it was so yummy! I learned how to make it at home after that because I never saw that truck again. It was about $2 per cob and I had to come back and get 2 more cobs. It was so worth it 😊
Food trucks in Seattle are gentrified roach coaches, that charge fast casual sit down prices for food that is usually just ok, and you have to stand in the rain to get it.
I think when it comes to food trucks its hit or miss. I've mostly had food trucks at conventions and had mix reception. Back at AX14 it was my first time ever having food truck food and it was the best. All the food was amazing and high quality. At my local cons in Arizona it's been hit and miss such as this years Fan Fusion I went to place that had burgers mainly and honestly it was bad. It pretty much was something you could make on your own level quality, specially for the price I paid, but there wasn't much in the area that didn't have you leaving the convention area. So regardless you spend or over spend. I still haven't tried any of the local food trucks in my area since the food is something I wouldn't necessarily eat other than one business which isn't around. I think it just varies. Would you rather spend on food you know the quality of or take a dip and try something possibly exciting? I 100% agree that the cost of food truck food is expensive, specially given the portion size, but at the same time I get needing to make a profit.

Food truck prices are so steep because most are small businesses that need extra money to get by, but the advantage is that they will always care extra for their customers and their products.
I suspect their prices are high mostly because their overhead is high. Owning a food truck might be cheaper than owning or renting a brick & mortar location, but it still involves the cost of a loan note, gas, insurance, cost of renting space in a commercial kitchen for food storage and prep (TCS foods can't be stored on a truck), employee labor, site rental (unless they have an agreement with a land owner to park and operate on their property for free), etc. And since the premise of most food trucks is that they present fresh, upscale food rather than mass-produced items, their food costs end up being higher than a typical fast food brick & mortar, which results in higher cost passed on to the customers.
My first time trying Mexican street corn was at a food truck in Las Vegas and it was so yummy! I learned how to make it at home after that because I never saw that truck again. It was about $2 per cob and I had to come back and get 2 more cobs. It was so worth it 😊

I think when it comes to food trucks its hit or miss. I've mostly had food trucks at conventions and had mix reception. Back at AX14 it was my first time ever having food truck food and it was the best. All the food was amazing and high quality. At my local cons in Arizona it's been hit and miss such as this years Fan Fusion I went to place that had burgers mainly and honestly it was bad. It pretty much was something you could make on your own level quality, specially for the price I paid, but there wasn't much in the area that didn't have you leaving the convention area. So regardless you spend or over spend. I still haven't tried any of the local food trucks in my area since the food is something I wouldn't necessarily eat other than one business which isn't around. I think it just varies. Would you rather spend on food you know the quality of or take a dip and try something possibly exciting?
