Lemon juice is the best pectin ever, also the stones of fruits like peaches and plums. Just ties the pits in a little muslin bag and cook with the fruits if you’re trying to avoid commercial pectin. Thanks for this I have 2lbs of frozen mangoes in the freezer and you’ve given me ideas x
Every fruit has it's own pectin. Macerating the fruit is a great way to bring it out. I do that the night before, refrigerate it, then blend and cook until thickened. Don't forget the lemon juice 😉☺️😋... The vanilla bean adds an amazing flavor to it too.

I made this today. I must say - I had 3 lbs of strawberries, cleaned, cut and cooked. Ended up with 4 8oz jars of strawberry butter. BUT, boy is it ever good!
Not sure why this came up -but I just finished making plum butter! I had a bumper crop this year so gave a bunch to my sister! And yes, I made it the exact same way for some; to some I added cinnamon, nutmeg and ginger ! A hint: if your fruit is very juicy - break out the slow cooker and cook the prepared fruit with the lid tilted a bit to let steam escape to reduce it. So much fun, easy to do - and a great video also!
When I make fruit jelly or butters, I always let them macerate in the fridge the night before. That way they let all their juices out and the sugar is dissolved. I blend the fruit and then let them simmer until it thickens. I love your channel because it thoroughly explains the process of canning. Thank you, your beautiful mother and grandmother for these tips on home canning 🙏🏼❤️ I don't like the store ones because of the sugar content and these homemade ones are all about controlling how much sugar you use. Which I'm going to choose to taste the fruit over too much sugar 😋😋🤤

One of the best things I ever tasted was from our apricot tree in the middle of Los Angeles City decades ago. My mom threw a giant bowlful of the apricots from our tree that year into a big ole’ pan and cooked it down with a (little) bit of sugar and asqueeze of fresh lemon. It was so simple and delicious we put it on toast, etc., or just ate it as a little dessert. It worked for so much! THANK you for this strawberry recipe!!
This is amazing. I saw this video and made some last year, the minute strawberries were ripening up from the garden this year my family asked me for it. It's on the stove right now! I've also done it with blackberries and peaches.
I was thrilled when you added the lemon juice to your strawberry butter. I always add a little lemon juice and the zest too to all my jellies and preserves. Except for peaches. That I add orange juice and zest. You're the first home canner that I've seen do this.😊 I've never heard of Strawberry Butter before but I'm sure going to make some this canning season. That would be fantastic to spread on the cake layers of a strawberry cake. Thx.😊
@@LisaMT1218 the acidity in oranges is enough to prevent the browning reaction and lemon juice doesn't meld as well with the delicate flavor of peach, as well as orange juice.
@@LisaMT1218 lemons are more sour than oranges. I tried with lemons but it overpowered the peach flavor to me so I started using oranges. You can use lemon if you like though. Your preference.

Soooo good. I went crazy one summer after buying a “luge” of plums. Made plum butter. Added ground walnuts to some of the mix after cooking them down. Plum Nutty! Super Delicious. ❤
That sounds like it would go beautifully in kolaches! When I visited Czechia, they made them with either walnuts with sugar, plum jam, apricot jam, poppy seed paste, or sweet cream cheese, topped with farmer cheese. (All of them delicious!)
You convinced me not to use pectin in my jam. Today I made a blackberry jam/butter that I put through a hand food processor to remove the seeds. I added lemon zest and bourbon vanilla paste to the berry mix. The flavor is amazing!! Thanks all the great recipes.

First time here and I have to say, Thank you for being so thorough in your explanation of your canning process you described every little detail and why and I've not found that in other people who have done little canning videos like this I have been so afraid to can cuz I'm afraid I'm going to screw something up because I didn't know the why and the fine details and then I'm going to open it up six months later and kill everybody seriously that's how deep it is in my head LOL. I will say this will be the first time I will make an actual attempt to can something just because of how thorough you were on your details. Thank you again

I suspect if done with tomatoes, it ends up tomato sauce. I suppose it depends on the other ingredients, as a tomato sauce would more likely just have a touch of salt in the plainest version.

I love that only added sugar here is to macerate the fruit. I have been trying to cut sugar from my diet and found that sugar alternatives like the one from king arthur have texture fine enough to macerate fruit. I live in the midwest and people still make and give gifts to teachers but its usually starbucks cards or something. This is waaaay nicer.

My Oma and Mom tried to get me interested in canning, but of course, I wasn't. They used wax to seal the jars sometimes. My Oma used to put preserves in between the top and bottom of a cake. Also good on vanilla ice cream. Yum!
My mother and grandmother used wax until they found out that both myself and my little brother were allergic to penicillin and several molds. Since wax seal jams can sometimes have mold they switched to ball canning lids and doing a quick water bath I missed popping the wax off and chewing it.

I try to use only lemon juice-perhaps add a shredded apple for strawberries-to thicken my small batch preserves. Only when I am using allulose plus sugar do I add a little xanthan gum to thicken. This will add another option for me to try … maybe when I do peaches next month. Thank you!

Sir, let me correct you! Jam is made from the "whole" fruit! Mashed up, sugar added, and some add pectin, others dont. Your recipe does look good. And i might try it, thsnks😊

Oh! I didn't know about the pits for pectin! Thank you! I have a corn allergy and it's in most commercial pectins so this is very helpful.

I would highly recommend replacing the lemon juice with a good quality balsamic vingar. Really adds another level to strawberry jams.

Jam butter is just like strawberry jam that has chunks in it, but the emulsion stick makes it a new UA-cam sensation.
