      @drhansbrewery I get hints of phenolics when fermenting light coloured hoppy beers 4-8 % ABV on typical IPA yeast. When I ferment dark strong beers with the same yeast no phenolics is present. What can be the reason?

      @@morgankall to be fair I think you’re actually mistaking the flavor for something else. Either a yeast can produce phenols or not.

    Turbo yeast at the supermarket? Nice! Also, looks like an amazing beer! Crazy that it fermented out in less then a day.

    I was about to write that the only "turbo" yeast anyone should need is a Kveik. Awesome stuff. But after watching this video, maybe the ordinary turbo yeast could work really well for a mockup belgium style beers in a hurry? Maybe someone should do a side by side comparison of a Leffe or Duvel clone done with a real belgian style yeast and a turbo yeast? Could make a good video me thinks.

      Wonder what would happen if it was fermented hot like Kveik or cold like lagers.

    yeast is a drying agent all you had to do to start fermentation again was add a little water if the sugars are not used up by the turbo yeast. turbo yeast is meant for making alcohol for distilling into vodka alcotech 48 hour turbo yeast that I use consumes 9 kgs of sugar in 23 litres of water in just 5 days to make 21% alcohol sugarwash.. it is not made for brewing beers.

      @@DrHansBrewery Try re-activating the brew once it stops fermenting by adding some water to it , chances are the yeast has dried out and its still hungry for moisture , you could also add more sugar if it wont start fermenting again. these are the two main remedies to stuck fermentation with turbo yeasts. most beers at 23 litres only have about a kilo of sugar added to them this is not enough for the yeast to fully ferment the brew. I have considered making ales with high sugar content for the use of turbo yeast but you would need at least 6 kilos of table sugar for each pack of turbo yeast for a 3 day fermentation in 23 litres 40pints of beer. the abv should be around 14%. 7kilos produces 17% abv in 3 to 4 days 8 kilos of sugar produces 19% alcohol in 5 to 6 days and 9 kilos produces 21% alcohol over about 7 to 10 days fermentation. if your going to use this much sugar the wort needs to be doubled . and venting of your barrels needs to be with a tube and a vessel half filled with water to make a free flowing airlock as the fermentation processes will produce so much carbon dioxide it will blow the water out of any type of airlock and it will sound like you have an engine ticking over in your brewing shed at 2000 rpm . the 135 grams of alcotech turbo yeast will then need to be cast in a wort with a temperature of 30 degrees C stirred in and maintained at that temperature either with a heating band or fish tank heaters. the actual temperatures for each quantity of sugar is 20 to 35 degrees C for 6 kilos, 20 to 30 degrees C for 7 kilos, 20 to 27 degrees C for 8 kilos and 18 to 20 degrees C for 9 kilos of sugar and 135 grams of alcotech turbo yeast.

    Doctor what do you do with all this beer now that you're running the 70L? You seem way too healthy and productive to be drinking it all
