✅Ingredients
• 4 bone-in thick-cut pork chops
• 1/4 cup extra virgin olive oil
• 2 tablespoons light brown sugar
• 5 cloves crushed garlic
• 1 tablespoon lemon juice
• 1 tablespoon Worcestershire sauce
• 1 tablespoon white wine vinegar
• 1 teaspoon ground mustard
• 1 teaspoon salt
• 1/2 teaspoon black pepper
✅Instructions
1️⃣ Place pork chops into a resealable plastic bag. Preheat the oven to 400 degrees Fahrenheit.
2️⃣ In a small bowl, make the marinade by whisking together olive oil, brown sugar, garlic, lemon juice, Worcestershire sauce, white wine vinegar, ground mustard, salt, and black pepper.
3️⃣ Pour marinade into the bag and over the pork chops. Seal and turn the bag gently to coat the chops in the marinade. Transfer to the fridge to marinate for 2-8 hours.
4️⃣ To cook, preheat an oven-safe heavy skillet over high heat. Remove the chops from the bag and discard the marinade.
Sear the chops for 2 minutes on each side and then immediately transfer the skillet with the chops to the oven. (Alternatively, transfer the chops to a baking dish.) Bake until the internal temperature of the chops reaches 145 degrees Fahrenheit, about 15 minutes.
Remove the chops from the oven and set aside to rest for 5-10 minutes before serving. Season with additional salt and black pepper to taste.

Here in Iowa where there's more pigs than people, we stick to 1 1/2 inch thick chops. You can marinate them if you wish, but a thick chop cooked to 145 degrees will be plenty juicy. For special occasions we'll special order 2 inch chops from the butcher and smoke 'em
I do something similar. It's very simple Greek style marinade. Greek EVOO, crushed or minced garlic, lemon juice, salt, pepper, and OREGANO!!! I use this for chicken and pork. Comes out great on my Blackstone. 🥰

I fixed these chops tonight; they turned out delish. 😋 I did brush on the left-over marinade from frig while cooking on grill.
PS: I’m not sure why to pan sear each side 1 min if you’re grilling. Doesn’t a hot grill do the same for a min then turning it down for the 15 min (7 & 8 min per side)?

My marinade, olive oil, garlic powder, apple cider vinegar, mango chutney, pepper flakes, lemon juice.
Pan seared then finished in oven.
Will have to try this, can you do a mirror glaze, I’ve tried so many times, I don’t know if it’s the icing on the cake, because the glaze falls off and doesn’t stick to the cake
