I can't get over how much your daughters look like a couple of your sisters. Cute. Hopefully this is a helpful hint: when you dip the chicken in the egg mixture, all I do is flip it front to back a couple of times until the chicken is coated... same with the flour and bread crumbs. Earlier I wasn’t feeling well, so I skipped dinner and laid down and had a nap. So I wake up, feeling better but it’s like 1am so I don’t want to eat this late. And I’m watching this and dreaming about crispy stuffed chicken. Funny thing is that I’m vegetarian 80% of the time and I don’t eat a lot of chicken, but this recipe is delicious. My Mom cooked this dish and she also did a stuffed pork chop and now I can’t stop thinking about chicken and pork chops. ❤❤❤

Ok Erin, I made the Chicken day before yesterday and boy you are so right it is so so so so good. I definately doesn’t look as good as yours because I can’t cut the chicken quite like yours but it came out so good and never tasted smoked Gouda cheese before but now I am hooked. Thank you so much for sharing. I was also like to ask if you can pray for my daughter, she is 35 and is dying from terminal cancer which has spread to her brain now. She has fought a good battle. I am trying to stay strong for her and her kids, my Grandbabies, which are 13 and 11, but it is so hard. I know the Lord only gives us what we can handle but losing your child after this many years together is and seeing her two kids numb because they just dont understand, no one does, is heartbreaking. Next time try cooking them on a rack inside the pan, then the bottom will be crispy too. Also, if you spray the tops of the chicken with a little avocado spray that'll help brown them up before you bake. The recipe looks delish
