    ✅How to Cook Chicken and Leek Pie at home with minimum effort?
    This budget-friendly recipe it's so easy to make and we are making a whole tray, so it's enough for the whole family.
    Ingredients for the Chicken and Leek Pie:
    1kg Chicken Thighs
    4 rushers streaky bacon
    2 Leeks
    250gr puff pastry
    1 white onion
    3 cloves garlic
    300ml double cream/heavy cream
    50ml white wine
    1tbsp flour and a touch more for dusting
    a sprig of thyme
    1/4tbsp salt
    1/2tsp black pepper
    1tsp wholegrain mustard
    1 free-range egg (egg-wash)

    Just cooked this for dinner - absolutely amazing! I have a question: do you have any tips to avoid the soggy pastry?

      Thank you Mariana, glad to hear this!
      If the pastry is only covering the top of the dish you should get it quite crispy.
      The part that touched the mixture will always be a little bit soggy, but nothing major.
      What I would suggest in case you want very crispy pastry is to cook some separately in a baking tray and add it as a "garnish" when you place the pie in the plate.
      A controversial advice, but it should work 😁

      If you decide to put pastry on the bottom, here's a tip....
      Take the pan you're going to bake in and lightly oil the bottom and place the bottom pastry in the pan.
      Make sure the pastry covers the sides of the pan also (stretch it a little as needed).
      Take parchment paper, scrunch it up and then spread it directly on top of the bottom pastry. (The scrunching helps the paper fit the pan better)
      Weigh down the parchment paper with baking pebbles, dry beans or uncooked rice (You don't need to fill the pan. This is just to keep the paper in contact with the pastry so it doesn't burn.
      Bake for 10 minutes at 400 degrees Fahrenheit. Then, set pan aside to cool and prepare your filling.
      This will "blind bake" your bottom crust and it won't be so soggy once the full bake is done.

    Will it affect the cooking time if I put pastry underneath the filling too?

      My opinion is that this wouldn't work.
      The puff pastry will get soggy underneath.
      If you want to have more puff pastry with your dish, I would probably add more on top by rolling it slightly thicker, or cook some puff pastry on the side and add later on to the plate.

    An interesting recipe; I used plain pastry and leftover chicken from last night's roast because that's what I had in; but a standard Chicken, (or Turkey,) pie can be a bit bland so I'm giving it a go.

    Ahhh man ..fell at the last hurdle ...a pie has a bottom ....this is not a pie...it's a stew with a pie top ...looks tasty ...but add the bottom

    What will happen if i put pastry on the bottom of the oven dish aswel then cooked ingredients on top and cover with top layer of pastry? Will the bottom layer get cooked?

      I believe it will get cooked, but there are also high chances that it will be quite soggy, that's why I've avoided adding it to the bottom. 🙂
