A way easier way to wash your leeks is to just peel them apart 1 by1 and wash them that way! Then slice them all washed. That way you aren’t soaking/washing away the onion flavor that comes out when you chop them.
There is something about leeks that make everything you use them in taste richer and more elegant. This pot pie looks absolutely amazing and I WILL be making it VERY SOON!!! It will take a little longer but well worth the time. Thank you, Laura! Your recipes ALWAYS come out perfect!! ❤

Your leek cleaning method is actually so good! Most people cut the ends to open it and rinse under water. Im planning on making potato and leek soup soon and going to use your method!

You can substitute the heavy cream for an alternative. Maybe a soy or an oat based cooking cream would work for you or even something like a cashew cream.

Onion and garlic added to water to make stock should be peeled. The skin and esp root end contains grit from the soil which ends up in your food.

I always feel bad about wasting the top half of leeks. Can they maybe be used in the beginning of this recipe to boil with the other veg?
I save and use for broth.
Use that in soup which you make with a blender. That way it doesn't matter however fibrous it is.
