    Larissa, you really do know what you are talking about when it comes to convection cooking. I believe this video is far better than others I have watched online and you haven't even put the bird in the oven yet. Good tips like being able to cook on separate racks at the same time, seasoning the turkey the day before and using a shallow pan to improve circulation of heat and air around the turkey. I will be watching these videos again before I attempt my first bird. Thank you.

    Thank you Larissa! I brined my turkey and let it sit out for more than 3 hours! I cooked it on convection roast the exact way you suggested and it was the BEST turkey I've ever made!! Thank you!!

    Thanks for the helpful video. Today was the first time we cooked our turkey in our convection oven and it came out amazing! The turkey was so moist and delicious, easily the best turkey we've ever cooked! Happy Thanksgiving!!

    Hi, I'm a little concerned about removing the turkey three hours prior to cooking. I'm very picky about maintaining proper temperatures during preparation. Even with just an hour holding a room temperature (depending upon warmth of room) can begin the growth of unhealthy bacteria. So, I'm wondering why three hours? Otherwise, all good tips for cooking with convection.

    Can you please tell me how long I should bake chicken breast and thighs bone in.
    I put onion on the bottom and sprayed a little olive oil on top and put some spices. How long should I bake it for? Two hours uncovered was two dry on 350f

    Thanks for the guidance. I'm confused about taking the turkey out at 160 and letting it rest. While resting out of the oven the internal temperature increases to 180? Your saying that the temperature increases 20 degrees while out of the oven.

    My convection oven automatically reduces the temperature when I set 400 degrees to 375 degrees. Do I need to increase the temperature to 425 degrees to attain the temperature you advised us to set?

      This is normal for most convection ovens. When you set the oven to 400 (convection bake), the oven only needs 375ish degrees of heat, so it automatically adjusts, and that coupled with the flow of the convection air produced by the internal fan, creates an environment that is around 400. If the oven does not have this auto temp feature, then 400 degrees convection would be like 430ish of raw heat. Likely too high for a turkey. Like I mentioned, pretty much all convection ovens will adjust the temp automatically. Perfectly normal.

      Thank you for this information! I only tried my Convection cycle once and the results were not good. Never used it again. I lowered my temp… if it is Auto set there lies the problem. I will check my instruction manual.
