- I loooovvveeeeee burgers and to me the bun is the star of the show! These brioche buns are super straight forward but absolutely out of this world, you’ll never by store bought burger buns again! These are actually the buns I made while on The Kiwi Bake Off and the judges LOVED them!

INGREDIENTS
Make 12 buns
360g warm whole milk
50g water
680g plain flour
70g caster sugar
1 tsp instant dry yeast
2 tsp salt
1 whole egg + 1 egg yolk (save remaining egg white for brushing + a splash of milk)
85g butter at room temp (+ extra tbsp for glazing the buns)
EXTRA NOTES
Oven temperature 180°C (fan bake)

They look lovely, but I’m puzzled at the making a paste from the flour and water bit: surely it just gets mixed in to the general dough and doesn’t make a difference? How does that work?
