I grew up in New York and every neighborhood had a bakery that made these. I have craved this roll many times but could never find them online as I never knew the name of them. In December I described the rolls to my housemate and asked if he knew what they were called as he also grew up in New York, and he told me, "oh, kaiser rolls!" I looked it up and yes, finally I found them!, searched for a recipe, found Martha's right away, thank you yes!, and made them with my housemate. They came out perfectly. He was satisfied but I was ecstatic to have again these wonderful rolls, and have been making them now twice a month. They are exactly as I remember them, with added poppy seeds and dried onion. Thank you Martha!
Just make a dough rope then do a double knot with the tails tucked in. It’s a no brainer when a dodo like me can do them. Grab a pint of egg whites at the market when you shop and brush then just before baking.

I LOVE Kaiser Rolls! I grew up in Baltimore and we ate them almost daily. Since moving to Texas and now Arkansas where a good bakery is as scarce as hen's teeth I have been craving them. With your recipe and instructions I will now try making my own. I love them with ham & cheese or smoked salmon & cream cheese.
Thanks Martha, living in the south I miss my New England favorites like hard rolls. They’re great for tuna sandwiches too! Now, if I can just get a recipe for a really good Neopolitan/margarita pizza like I can get in Little Italy… without a brick oven unfortunately…

I am making these rolls now. I tried a recipe from the Bread Bible. The hydration was too low and I wasn't happy with the end result. The hydration in this recipe is much better. My fingers are crossed.

I stopped cracking eggs on the edge of a bowl many years ago. I tended to get more egg shells in the bowl not using the edge of the bowl. So I just want back to using the edge of the bowl and I haven't seen one piece of egg shell in the bowl. I've come to the conclusion,that who ever said not to use the edge of the bowl is full of it 🤣

They remind me of the streets of Brussels in the morning. Damp cobbles and bakeries smelling of fresh bread and espresso.
I would make garlic toast out of them. Slather with garlic butter and toast until melted/edges a little browned. Amazing!
