For this rum and raisin ice cream recipe you'll need:
4 egg yolks
1 1/2 cups milk
2 1/2 cups heavy creme
3/4 cup fine sugar
1/2 cup raisin soaked in rum
pinch salt

I'd make a rum-caramel sauce from the remaining rum after removing the raisins. I'd use butter, brown sugar, heavy cream, and the rum-raisin syrup to make the sauce. Set aside to cool. Then stream in the cooled caramel into the soften ice cream so that the caramel will be in ribbons throughout the ice cream. ***Rum raisin caramel ice cream***😋

Hey what rum do you use?
I tried this recipe out yesterday without an ice cream maker. It took a long time but it came out really delicious. Instead of soaking the raisins in rum overnight, I put them to simmer in the rum on the stove. I have to say that I am not tasting much of the rum, so next time I will try soaking them for a couple of days. As far as making it without the ice cream maker, I think it took long because I put the mix in the freezer while it was still warm and then I went in every 45 minutes to mix it (I placed the mixture in a bowl which was placed inside another bowl filled with ice). The next time I think I will just leave it for two hours straight and then mix it and then leave it for another two hours. I ended up leaving it overnight and so in the morning it was very frozen on the outside and a little soft in the middle. I put the mixture in the fridge so it would soften and then I took it out, mixed it a bit and put it back in the freezer. Now the texture is perfect!
yes sir you need to soak to get the rum to soak into the raisins.. when you simmer the rum you are removing the sugars and flavor will evaporate. So soak away you will see the difference.. enjoy ;-)

I love rum raisin ice cream but I think I would add shredded coconut to this recipe.
Best recipe ever! I have made this twice, and now I’m dabbling in other fruit flavour combinations.Today’s ice cream is pineapple and mango macerated in Malibu coconut rum.

Hey Chris, love the recipe and i put some thought into what i would add, i tried it out today and it came out pretty good. Instead of 2 1/2 cups of heavy creme i used 1 1/2 cups heavy creme and my secret ingredient... 1 cup BAILEYS Irish Cream. Man, it had a nice kick. Ice Cream for the adults but it was so good.

Oh boy oh boy .. That look good.. To me that look perfect ... Don't need anything .. Instead of vanilla extract. Use fresh vanilla bean..

Chris this looks delicious, your recipe is perfect. The only thing is, I would use an electric whisk to reduce the "elbow grease".

Grapenut ! Think it would be wicked, Adds texture, and a depth of flavour, th e maltiness will enhance the rum and raisin flavour.

i would add some Cinnamon, nutmeg and pralines topped with Toasted shredded coconut . Alot of flavor profiles
I would have it served with a banana and chocolate syrup. Chris U Did A Great Job, however I would add fresh grated coconut into the mixture

hey chris, one ingredients I will add is baileys so it will blend with the rum and the raisin.
Some dark rum and serve over some grilled bananas. That would be ultimate.

Along with the vanilla essence some Agostura bitters, the twist and blend with the raises will make you not want to put down the spoon....then also you can let the ice cream sit for few minutes on the counter so it can melt a little then drink it..........my favorite pleasure when I was pregnant, lol....also pour it over some mango slices, omg yum.

The one ingredient I would add is a pinch of cinnamon.Garnished with chocolate chips.
Nuts nuts nuts!!!!! I would add either chopped almonds, pecans or walnuts or maybe a little burn sugar to make a kind of black cake flavour

Might sound crazy but I would add a little soursop juice with the heavy cream. Sounds wicked!!!!!
I would add some more rum towards the end of the mixture of the finished product.
Rum raisin is also my favorite. I would add MORE raisins. I always run out of them.

chris, back home in Trinidad we had the pallets on the stick (if they still make them) most delicious treat, in the US, not good, too sugary, not good flavors like trini flavors . if you post the recipe we can put the mixture in the popsicle container and freeze. YUM 😜

add a hint of coconut and little drop of nutmeg.
Frozen Avocado will add to the creaminess. I also add nuts to my ice cream for a nice crunchy texture.

I would add some vanilla bean - I love vanilla flavoring
I would add a little blackstrap molasses and some grated, candied orange peel, along with some chopped vanilla wafers.
Would add in some cherries soaked in Rum as well

It is pretty much complete as you have it, but the only other thing to try to add would be some Orange Zest.
I'd add some Angostura Bitters for that added taste of home.
Or try rum raisin and pistachio. Love home made pistachio ice cream with cruisan rum when I lived on the islands.

Chris, I would put melted caramel on top of the ice cream. Nice taste to go with the ice cream.

I would fold in small chunks of pound cake once the ice cream is done churning. :)
I love Run Raisin ice cream. I think adding some goat cheese to this recipe would be delicious. Salty and sweet, yum!

One ingredient I would have added would be coconut. But it have to be fresh coconut. Either the milk, (not too much) or grate the nut n add it in. That's just me!
