How To Make Currants Roll As It's Done in Trinidad and Tobago.

  • A recipe from Trinidad and Tobago for making a wonderful dessert called currants roll. We'll start off by making a flaky crust, to which we'll stuff with currants, cinnamon and brown sugar.
    You'll Need...
    3 cups all purpose flour
    1/2 cup butter (cold, in cubes)
    1/2 cup veg shortening (cold, in cubes)
    ¼ teaspoon salt
    1 cup or more ice cold water
    Filling mixture:
    1 1/2 cups currants
    1/4 cup brown sugar
    1 tablespoon cinnamon
    1/2 cup melted butter
    1 egg + 1 tablespoon milk

    Grenada's tuned in, a pleasant Good Night to my Trinidadian brothers and sisters, I must say this is one of the best recipe I've ever seen and the rolls look very tasty. I haven't made Currant Rolls in a while and so I ended up here, didn't regret it at all.

    I wish someone would give you a show on the food network. I'm tired of them making Americanized "Caribbean" dishes. We need a real West Indian to represent us. But anyway, thanks for your recipes

    Hi Chris.. I am.first time subscribing. Thank you for sharing your recipes, because of you my baby has been experimenting with new and exciting recipes. Valentines day he made his first current roll. His dinner presentation was surprisingly great, and dessert of current rolls was delicious. This was a man who couldn't boil water. He is originally from Trinidad. June-July we visited Trinidad; my first visit had a good time. Went to Maracas Beach....love the bake and shark.

    That's a good job of making cinamon roll. Currants roll dough is made different.

    Can you substitute melted butter and milk instead of eggs and milk ? Also do you know how to make coconut turnovers that they make in Barbados? Is it similar to your currant rolls only substituting coconut. If that is not the case can you make them please. Thanks

      No but you can use lard, wow they don't have vegetable shortening in the UK! It's simply Crisco, I thought that was everywhere!

    Good recipe Chris tried it and it tasted great and the pastry was very flaky. You have to be very gentle when cutting it up.

    Ummm Self rising flour and all purpose flour are two totally different types of flour bro. Thanks...my first attempt at this is totally flawed having used the WRONG flour.

      He use to post accurate recipes BUT as of now HE HAS NOT BEEN. His first recipe, some years ago, for green seasoning was spot on, a year or two later when I Iooked him up on youtube - he changed the ingredients. Good thing I wrote the ingredients down the first time!!!

    Self raising flour is, flour that has a leavening agent - baking powder - and salt added to it during packaging. Plain flour is just plain flour... Hope this helps :D You do great cooking ,thank you for sharing !

    Growing up in the islands (St.Kitts) my Auntie used to make these all the time like a boss, they are called Rasin Rolls. She also always had Rasin's soaking in Rum for cake making goodness and would sometime make Rasin Rolls with Rum soaked Rasins.... Mercy! And i just couldn't get enough of this guilty pleasure pastry good eat. You just couldn't eat one, you had to eat another and another. Her Rasin rolls were always flaky crust and always had them in a brown paperbag to carry around all sliced up the roll. Rasin Rolls were da bomb!

    no a food processor. you can easily do this by hand though. Just try to be quick as you don't want the butter to get warm.

      Yes you can. I don't like to use the flour dough as well and puff pastry works just fine for me.

    um AP flur is just flour, wheras self rising flour has stuff added to it....(salt and baking powder i think...)

    Its too flaky and crunchy for a sub, and we always use raisins and sultanas as well...
