When you value your customers, you should have the toggle button to turn off AI . It is actually a great step that Notion wants to reduce their dependency on AI models hosted by other companies because when data gets routed from your server then the 'privacy question' becomes even more complicated. Also, having Notion's own AI model and Machine Learning infrastructure could mean sustainability for the business. But then again customers should get a toggle switch to turn off the AI access.
AI finally, but 8 years too late, Moved to Amplenote, to Capacities and now Saner AI Notion isn’t for daily structured to do or to take in PKM…. The learning curve is wayyyyyy to high, it is however best extensible PKM out there. Again, no ding on them, they serve a particular group or people …. And no … i gave up trying to follow

Looking to learn more about this use, how important is offline mode ?
Offline only ? Or Hybrid approach?
Anytype is a good Notion alternative that I use, it has offline and online modes and is privacy-respecting (and open source!)
