Most likely he use the cheese sauce/roux method. So it depends on what method the cook uses. Most restaurants uses the cheese sauce method. (French method). Cause the chef uses the term "bechamel" sauce which is a french term for adding cheese in warm milk. Well, everyone has there preference .
It's all a matter of preference. I grew up eating macaroni and cheese the "old school" way and I still love it that way! No shade appreciated and I didn't take it that way. Thank you for watching.
