Inspired by a Sri Lankan eggplant curry 🍛

    RECIPE (4 servings, 35min prep time):
    -2 eggplants
    Cut in chunks and heavily salt it.
    Wait 10mins and pat dry them.
    Fry in some oil until charred.
    -a thumbsize piece of ginger
    -3 cloves garlic
    -1 Tbsp curry powder
    -1 Tsp chili powder
    -2 Tbsp tomato paste
    Roast 4min.
    -1 Cup (250ml) each water and coconut milk
    -1 heaped Tbsp peanut butter
    Let it simmer 10mins.
    Finish with salt, lemon juice and a touch of agave.
    Serve with rice.

      ​@@valeasrultra it won't be same flavor for sure but you can try airfrying the eggplant slices with the spices (with ground versions of ginger and garlic and the others dry spice powders she already uses) and salt to get some flavor in them first. then gently simmer the water, coconut milk and peanut butter and tomato paste and add in the Airfried eggplant slices and that might work.

      YOU CAN BAKE & broil it first but it tastes better when it is Sauteed...

    Just a small tip, after cutting the eggplant instead of salting it, soak it for couple of minutes in salted water, drain and use the veggies. Your dish will taste so much better as this will prevent oxidation and browning.

      Hello can you please share the ingredients of this particular curry powder used in this srilankan recipe? Im from India and as you know we have so many states and there are different types of curry powders in each state. I would love to make this dish, just need to get a clear idea of your version of curry powder.

      In our curry powder, we use the required amounts of coriander seeds, fennel seeds, uncooked rice, black peppercorns, mustard seeds, fenugreek seeds, cloves, cardamom pods, curry leaves, and dried red chillis.
      Then roast everything and powder it. I hope this helps😊!

    ARE YOU KIDDING ME? I'm a srilankan 🇱🇰 and have been a fan of you for a while now, for some reason I haven't commented you to try srilankan food which I mostly do with other food content creators 😂 so this is a big surprise for me to see srilankan food in this channel. btw we don't really use tomato paste in our curries but sometimes we use pieces of tomato, but should try this recipe as well. TYSM!

    If you want to make this taste authentically Sri Lankan, I would HIGHLY recommend using Sri Lankan roasted curry powder. The blend is quite different to other types and has a really distinctive taste, and gives a dark brown appearance to the curry. It’s not hard to find online but you can also buy the individual spices and make it yourself.
    Also we don’t use peanut butter or tomato paste but I’m sure that tastes great, it’s mainly the curry powder I would recommend using a Sri Lankan one

      @@miffyishappy_ coconut cream is just the same as coconut milk but less diluted, you can use either depending how rich tasting you want it

      There are some reasons to wash rice: 1) in a lot of cases ( product testing) the rice is contaminated with arsenic acid. You can wash it out.
      2) rice has phytic acid. The same with seeds, nuts, oats, lentils etc. this is keeping a part if the nutrition. Zink, Iron etc. With soaking you bring up the process of phytase. So get a bigger amount of the nutrition. And for some people it's better to digest. Rinse after soaking.
      3) the rice get more fluffy. Just like in the restaurant. With soaking and rinsing.
      How many hours the nuts and co need, you can google. It's worth it.

      Also the rice sometimes contains eggs And waste products of weevils little bugs that often infest rice 😭 for me thats the main reason i wash it Now although i wasnt doing that Always until i found out this ​@@stefanienia3914

    Thank you for trying Sri Lankan dishes! Although we don't usually use tomato paste, just plain tomatoes. Also no peanut butter as well. But I think it'll add a nice flavour.

      ​@@loulou785741I'm guessing in a pan, on a stove. A rice cooker is not that different tbh, it's just a pan that doesn't need to be on the stove, and turns off at the moment the water evaporated

    Looks so good! Watch one of Maangchi's eggplant recipes to see how to properly cut up an eggplant! All you have to do is peel back the leaves - right now you're cutting away an awful lot of usable eggplant!

    Next time make a space in the middle of the pan put the curry in the hot pan and kind ofbrown it down a bit. It releases the nutty aroma and stops the runs

    made this today, its very delicious!!! I added fresh tumeric and ate it with paneer baked in garam masala and store bought coriander garlic naan bread. also couldnt use lemon juice.

    Hello, I have tried this recipe. I don't have much cooking experience.
    I did not use rice, because I wanted to keep it low carb, also we are only two people so I used only one eggplant and added some paprika that I had laying around. I soaked them in salted water and indeed there were no brown spots. I followed the recipe from that point on.
    My result: the dish is easy and quick to make, also very cheap because of the little ingredients. The paprika added a nice crunch to it and I can imagine that it would also taste good with Brokkoli and maybe some carrots. Adding maple syrup was a good idea and really brought the meal together. Also, minimal cleanup is a plus point.
    For two people, my variant could have been more, but it is definitely a nice and light summer meal. 8/10

    Tried this recipe. I didn't have tomato paste. So I blanched and blended a tomato & 2 dried chillis then added it to the curry. It was yummy 😋. Thanks for the recipe

    Get rid of the sweetener for indian or curry based dishes. Replace it with a cherry sixmze tamarind(paste). It gives a whole new level umami❤

    You dont need to salt white rice, just water. It supposed to soak the good flavour of what ever dish you're having.

    Super recipe! Curries i have a long love affair with. Tho i could never take the heat of real Sri Lankan curry, I am all there for a toned down version. Thanks for the recipes. I can and do use them àll as I'm always looking for more ways to use veggies(they are what everyone tells me to eat more of)
    Since 1992. Could you do more videos on veggie fritters, i really Love these when i go to Indian restaurants.

    Yes eggplant curry or stir fried is delicious. I use roasted cashews n peanuts n grind them n add on. The taste adds in superb. I just can eat the egg plant. Mouth watering😘😘

    Made this yesterday and it was delicious. I added a little bit more coconut milk to my taste and threw in some bell peppers. I forgot the peanut butter but it still turned out well. Super easy.

    Honey - Nope
    Coriander - Nahh, we're not Indians. Put curry leaves and rambai leaves instead!! That's the flavor! 😋
    Coconut milk - hell yeah.
    Onion - why not?
