They actually shot the bookshop fire scene with real gas jets shooting out flames with David Tennant in the room. The behind the scenes images are amazing.

Dog had most of his hellhound-ishness burned away. First when he was turned into a tiny dog, then when he went into the witch's house that was protected by the horseshoe. Dog left because Adam was scary and he wasnt obligated or compelled to stay the way he would have been if he were a full hellhound.
The horsemen changing appearance is supposed to be them starting to look more like what they represent, in the books it's supposed to be more pronounced, Wars teeth become bullets, pollution starts melting into a blob of toxic waste, and so on. The soldier on the gates was reading American God's which is another Neil Gaiman book.
