Hi Catherine, I knew that cake mixes used to be bigger so I googled the info. Cake mixes used to be over 18 ounces ( I seem to remember 18.5). So recipes from the 70's would have more dry mix. Maybe it doesn't make a big difference. But it sure explains why our cakes are smaller today and don't fill an 8" cake pan like they used to.
Your right kay. I make Kentucky Butter Cake. Look it up if you haven't heard of it. You will have the ingredients in your pantry. If you don't have the buttermilk, add a tablespoon of vinegar to a cup of regular milk. This cake will feed 20 people and its delicious.
Yes, cake mixes are smaller. But you can still use those recipes from the past when cake mixes were 18.5 oz. Just add 5 tablespoons of self-rising flour to the 15.5 oz. box mix. I got this tip a few years ago and it has worked well. One time I only had plain flour so I added 1/2 teaspoon to it. That worked well too. Give it a try.
My gramma would use lemon cake mix, and in the South this is actually called a 'Lemon Chess Cake'! I am so excited to finally be able to use my grammas recipe after quite literally two decades since having it last. Rest in peace Gramma, one day Ill be with you again in the Celestial Kingdom
I’ve made a Neiman Marcus “brownie” variation for years and use a German chocolate cake mix and add chopped pecans. Then the frosting is the same cream cheese topping you made for this, but I add a teaspoon of vanilla. Delicious and always a crowd pleaser.
I was first introduced to this cake a few years ago, & I could hardly believe how decadent yet simple! Whenever I bring it to family gatherings or functions, everyone raves!
I just watched a documentary on Neiman Marcus, what a story! They were brother and sister, which I did not know. They overcame so much adversity, but kept on going to gain so much wealth. Cake looks delicious! Take care, Missy...
I got this recipe from my mom too, it is delicious & not hard to make. My moms no longer with us & we miss her so much, so enjoy having your precious mom as long as you can ❤️
that looks really good. I think I would do a strawberry cake mix and maybe swirl in some strawberry jam into the second layer. That would be amazing :)
I've been making this since I was in highschool.. I've made it for many events and family gatherings as well and have gotten many compliments and people have even paid me to make this for them. My aunt put coconut and pecans in hers. This is the best tasting cake ever! I've also made the strawberry and lemon flavors.
I make these all the time, but we always called them Chess Squares. I have used white, lemon, strawberry, butter, and yellow cake mixes, and brownie mix. I love the white cake mix, but I think my personal favorite is the lemon. I add some lemon extract to the cream cheese mixture for a little more flavor. Sometimes I add a little vanilla to the cream cheese mixture. These are always a big hit at family gatherings.
Good for you Catherine taking care of your mom. My mom lived with my husband and I 19 mos. before she passed. I cherish that time and wish I could have done even more for her. I would love to see your mom in the kitchen with you. Another great recipe. Thank you !!
I’m in! I’ve never had cake like that! I’m hoping your mom will join you for at least an episode. I lost my mom 3 years ago and relish the time we had together in the kitchen. It’s good memories….❤️
Good morning Catherine. That looks soooo delicious and simple. How exciting to see your mom’s recipes and share them. Maybe one day she can cook with you. God bless and have a beautiful day 🥰🤗
Dark Chocolate cake mix would be my choice.....if you think if would work ok! Lemon would be great, and I'd add some fruit on top when serving! Strawberries, raspberries, blueberry pie filling etc.!
Sounds so good! I think when I try it I will use the lemon first. Its going to be my dessert for our next card club. Thank you Catherine and thank your Mom....
Hi Catherine, I made this cake years ago but not seen the recipe in a long time. Going to have to make for my grandson he has never had it. I am excited to see you bring back the old vintage recipe to life on your videos. Oldies but Goodies.
I have made this cake twice. The first time was good but not great. It was dry. The second time I added one extra egg to both the crust and the cream cheese batter, and baked it for just 37 minutes Now, it is delicious!! I don't know if it because I live at 5000 feet, but it just needed more. Even the grandsons love it..
Oh boy, my imagination is going wild. I have a sort of Black Forest kind of thing in mind, but it would take an extra ingredient. Chocolate cake mix on the bottom, then either layer a can of cherry pie filling on top of that and before the cheesecake layer, or else mix it into the cheesecake layer. Then maybe some chocolate chunks on top for decoration. Or, to go in a different direction, a spice cake mix for fall. I’m going to have fun with this.
Looks yummy, Catherine! Reminds of the gooey butter cake.... I like making the pumpkin gooey butter cake and sometimes I substitute sweet potatoes for the pumpkin. Yummo!! My mind is racing with ideas to your recipe. Thank you for sharing one of your mom's recipes with us.
That's something I would really like to make. I saw a documentary on the family and how they got started. Very interesting. Thank you Catherine and your mom for this recipe.
Catherine this looks like another winner . Would be good with some fresh strawberries on top or blue berries. Will be making this soon, maybe today ,have everything I need.
Lee one of my friends makes it and it's called an irregular cake and she makes all different kinds of flavors of flavors I personally like white on white with maybe a chocolate swirl
This is sort of similar to Paula Deen's Gooey Butter cakes. I have "doctored" that recipe up by using a chocolate cake mix, then add a small jar of Nutella in with the cream cheese mixture. It was fantastic! A few nuts wouldn't hurt, either. BTW, I am very impressed with your ability to hold a small bowl in front of the camera with one hand and crack eggs single handedly into it with the other. I can barely crack eggs without making a mess using both hands.
I love to watch you cook sister Catherine, I'm making my own cake mix now but mine is gluten free, the gf cake mixes are expensive here in the uk. Thank you Catherine for always bringing easy and delicious recipes to us.😃💝👍🏼🇬🇧
I am going to experiment & come up with my own version of this. Instead of boxed cake mix for the crust, I am going to substitute sugar cookie dough for the crust. Wish me luck!
I made this this past weekend. My family including grand kids loved it. One of them was here on Monday after school. She asked if I had any. She was hoping for leftovers..
Looks delicious going to make chocolate got it in hand ❤️ love your dessert days Catherine i ,made alot of them ,shared with co workers and friends they all love them and the meals too ....love,love,your channel ❤️

okay, i made this w red velvet choc cake mix..this recipe is to blame for my stretch jeans blowing out. tyvm. luckily my shirt was long.. ohhh.. go ahead catherine...laff.. but i topped it w berries😋

This looks so good and oh boy so many different cake mixes you could use. I absolutely love cream cheese. I think I would use strawberry and or a lemon cake box mix.
Hello and thanks for recipe. I have never heard of this dessert but, I love cheesecake and also finding a love for using box cake mixes for creation so this is perfect. I will probably try a hand at Germans chocolate as the crust.😋
I've made these for work and holidays. So far have done the yellow and red velvet. I bet a little coconut extract in the cream cheese mixture, chocolate cake mix and some fine grated coconut would almost be like a Mounds
Glad to see a simple version of this cake. A lady i worked with had a much more complicated recipe but love yours. Do you have a link to a pot roast in a crock pot? Mine is never tender. Thank you
I definitely think a strawberry crust would be delicious. I think I’d add some freeze dried strawberry powder to the cream cheese mixture. If I did a chocolate crust I’d add some powdered peanut butter powder and reduce the icing sugar just a bit.

Making this as a brownie sounds delicious. My daughter doesn’t care for cake but she loves brownies. Thank you for sharing
Can you share the recipe? Sounds yummy

That looks incredible. I'm going to try it with lemon 🍋 cake mix for my dad's birthday. Lemon is his favorite.
Spice cake mix for bottom "crust" layer and add a bit of cinnamon, nutmeg and pumpkin to cheese mixture-perfect for fall!
That would be delicious.
