Japanese MILK BREAD - Soft and Fluffy - Fresh Milled Flour

- This is my second time successfully making this bread recipe. I'm still a novice at baking bread and I've had a difficult time using freshly milled flour to achieve a soft bread. The moisture content in freshly milled flour is higher than store bought flour so I have to use either, less liquid or, more flour (sometimes both), to achieve a similar outcome. I got the best outcome using an organic high fat* butter and organic full fat cow's milk. I adapted this recipe from tiktok user @mxriyum . Below I've posted her original recipe for reference; it was my baseline for this recipe.
Yeast Mixture - must sit for 10min:
1 cup - warm milk
2 1/2 tsp - active dry yeast or instant yeast
1 tbsp - sugar
Dry Ingredients:
3 1/2 cups - flour
1/3 cup - sugar
1 1/2 tsp - salt
Wet Ingredients:
1/3 cup - melted butter
1 egg
Combine yeast mixture, dry, and wet ingredients in one bowl. Then kneed until smooth. Cover and let rest for 1 hour in a warm place. Shape into bread pan. Rest for another 30-60min. Brush with an egg wash. Bake for 20min at 350F. When bread is finished baking and still warm apply a honey butter mixture (1 tbsp melted butter + 1/2 tsp honey). Serve and Enjoy.
