    Ground turkey
    Shallots
    Leaks
    Lemon
    garlic
    Chilli
    Breadcrumbs
    Sage
    Parsely
    1) Fry shallots n leeks, season with salt pepper n a little chilli
    2) roughly slice garlic, add oil, add butter
    3) turn gas up high
    4) add turkey mince & add salt and pepper and lemon zest
    5) cook pasta
    6) oil pan 2, add butter, season, add breadcrumbs & sliced sage
    7) add cream & bring to boil
    8) add chilli and parsely to bread crumbs
    9) add pasta to mince
    Tip: freeze mince 5 mince before cooking

      Thank you SO much for this. I followed the written recipe / method in a magazine and it's different from the one here on UA-cam. They boil the leeks etc. Nearly had a nervous breakdown ha ha. This helped a lot!

      @Andrew Orr butter and cream contain trans fat which is OBJECTIVELY unhealthy. There is some debate about saturated fat. In very large amounts like Gordon used, it is unhealthy and documented. Your uneducated opinion does not matter, science is against you

      I believe they must be grown hydroponically.
      You would have to open up the leeks and clean well otherwise.

      As an Italian I can tell you this is the right way to cook a sauce for pasta: not too many ingredients, but chose the right one. Never put sour cream and always cook pasta 2 minutes less than what’s written in the package, because while you mix it with the sauce it still cooks. Finally somebody who is not Italian which knows how to cook pasta, couldn’t expect more from Gordon

    This is one of my favorite recipes from the cookbook! Its so easy! I dont ever have fresh sage or leek so i just used ground sage & more shallot and it works well. The flavored breadcrumbs really make the dish. 😋

      I was looking for something like this too - I love leeks and shallots, but here in Ontario our leeks are easily 3 times that size! I think I'm going to make this for dinner a night this week

    When I want the water out, I use my homemade ghee instead of butter. Sometimes I want water, making caramelized onions for instance. I'm an amateur, and make some things up on my own. I like the onions to steam, covered, until the cells break down, then up with the heat, very hot constant stir until the water is gone, then medium until caramelized. Of course, though your goal here is a little caramelization, it is not a dish of caramelized.

    Reminds me of my mother cooking. She could cook anything. Now that my children are grown up and I look back at my life and what I would do over , the Biggest thing is I would still be at my mother’s house ! There wouldn’t be a Police Department that could drag me out if I had a do over ! Screw leaving her ! She cooked did my laundry and always had good things to say about me no matter what rotten shit I caused ! Oh yeah, Momma House! I can remember friends in High School asking me if I needed a ride just to get me to invite them in because my mother fed everyone until they would pop ! My friends mother asked him what we did at my house that we couldn’t do at hers , he said that’s easy his Mother knows how to Cook ! A little Jewish woman that is still my hero ! G d Bless her !     Adding salt to water will increase the temperature needed to boil and will also increase the time needed to boil. It's called boiling point elevation.

      I feel like Gordon makes half his stuff up as he goes along. We use turkey because it's lean, then proceeds to use half a block of butter, and a shit ton of salt and olive oil.... He's gonna die young eating like that 😂

    Yes! I made this tonight - I used egg noodles 'cos I didn't have the other and I used regular onions and celery 'cos I didn't have leeks and sour cream 'cos I didn't have regular cream (yes I could have used milk but I thought the sour cream would add a nice flavor and it did) BUT I have tons of fresh herbs - sage, parsley, basil - from my Aerogarden I got for Christmas. No one didn't like it - it got "pretty good' and "not bad" reviews. Yes I'd make it again.

    Don't skip the sage encrusted breadcrumbs. The texture ( and buttery, herby flavour ) they bring to the dish is the icing on the cake. Would never have thought of adding breadcrumbs to pasta. But it's great.

    Growing up, I never really liked beef but I loved pasta. So when I started cooking for myself in college I started using ground turkey instead of beef and it's such a great substitute!

    Making this tonight - this preparation is pretty different from what's suggested in the book. The book has the leeks in the boiling water with the pasta and no chili flakes. Kind of wondering which method Ramsay prefers...

    Hello Chef Ramsay and/or team Ramsay! I was simply wondering if Chef has ever done a teaching video on the 5 mother sauces? I've been searching a lot about them on internet and books. Found no video from Gordon on UA-cam. But it'd be nice to have sir Ramsay to teach is through a video since he speaks so clearly and it's simple to follow! And maybe a few tips on how to use them 5 mother sauces for the alternatives. Im not sure if my message make sense hahah sorry Im not native english. But thanks for your time and reading.     I think this is one of your best series. Start to finish and we see the beautiful result. I do have one question though. What has been your favorite non stick pan you have ever used?

      Probably the ones he’s using in the video. They’re a nonstick pan but because they’re using some kind of special stuff you can go in their with metal tools and they’re also retaining the heat quite well. Forgot what they’re called tho and they’re pretty expensive if I remember correctly. Just google best nonstick pans or something and I’m pretty sure you’ll find them

      @@nemau3358 If you goggle best non stick pans you get a bunch of comparison videos of all sorts of pans and each review disagrees with the other. I've seen different ones on his videos. This is why I asked his favorite that he has ever used which might not be the one in this video.

    That's how I cook macaroni at home. I pour some milk or curd instead of the excessive butter and cream and season with oregano to give a bit of Italian touch.

    This looks amazing! I'm not supposed to have noodles or breadcrumbs because of my insulin resistance, but I can sub for zucchini spirals and almond flour or something else. I'll definitely be trying this recipe soon!😍

    Hey Gordon! As someone with a Bachelor's in Chemistry, I can say: Putting salt in water does not make it boil faster. Putting salt in water increases the water's boiling point, but salting it does not make the water boil any faster. With that being said, I'm sure it still tastes great!

    Salt doesn't make non-boiling water come to the boil quicker. It actually increases the boiling temperature so if you add salt to non-boiling water it takes *longer* for the water to boil.

      it only takes fractionally longer, nothing noticeable as it would be a matter of seconds, unless if you are adding copious amounts of salt

      Correct. Simple physics of saturation. Salt saturates the water. The higher the saturation, the higher the boiling point. You salt the water to season the pasta, or whatever you're blanching, not to make it boil faster. Pretty upsetting he said that. But... I guess he's a chef, not a physicist, or chemist (although chefs should have a really good understanding of the chemistry of their food.)

      There's also chefs who think that searing meat "seals in the juices". There's plenty of apocryphal misinformation in the culinary world that even experienced chefs just take as fact.

    Delicious! Just made this for dinner. It's really hearty and filling. Yet, for some reason, my brain expected the turkey to be sausage the entire time I was eating it lol
