- Quick Homemade Pizza Sauce

Ingredients:
1 can (15 oz) plain tomato sauce
1-2 teaspoons olive oil
1 teaspoon garlic powder or 2 minced garlic cloves
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional, for a spicy kick)
1 teaspoon sugar (optional, to balance acidity)
Instructions:
1. Heat the Oil (Optional):
Heat the olive oil in a small saucepan over medium heat. If using fresh garlic, sauté it in the oil for about 1 minute until fragrant.
2. Add the Tomato Sauce:
Pour the plain tomato sauce into the saucepan and stir to combine.
3. Season the Sauce:
Add garlic powder (if not using fresh garlic), onion powder, oregano, basil, salt, black pepper, and red pepper flakes (if desired). Stir well.
4. Simmer:
Lower the heat to medium-low and let the sauce simmer for 10-15 minutes, stirring occasionally, to allow the flavors to meld.
5. Taste and Adjust:
Taste the sauce and adjust the seasonings as needed. Add a pinch of sugar if the sauce tastes too acidic.
6. Cool and Use:
Let the sauce cool before spreading it on pizza dough.

Vegetable Tortilla Pizza

Servings: makes 2 personal sized pizza (~7” each)
Ingredients
Two (2) 7” flour Tortillas
4-5 Tbsp of pizza sauce
¼ to ½ cup of shredded low-fat cheddar cheese
¼ to ½ cup of mozzarella cheese, shredded or thin strips.
1-2 Tbsp of chopped green bell pepper (or any colored bell pepper)
1-2 Tbsp of red onion, chopped (red onion is best, but any onion will work)
1-2 Tbsp of canned kernel corn
1 medium sliced mushroom
2-3 Tbsp of cherry tomatoes, sliced
5-6 leaves of fresh spinach or basil
1 Tbsp of black olives, sliced
1 Tbsp of Jalapeno pepper, sliced
Sprinkle of hot chili flakes
1-2 tsp of oregano flakes
Honey
Directions
Place one tortilla on a baking tray
Ladle 1 Tbsp of pizza sauce on it and spread it evenly over the tortilla
Place a second tortilla on top of the first one and ladle the remaining pizza sauce on this top tortilla, spreading it evenly to within ½” of the edges.
Sprinkle the cheddar cheese over the top of the tortilla
Sprinkle the mozzarella cheese over the top of the tortilla
Distribute the chopped bell peppers over the top of the tortilla
Distribute the chopped red onion over the top of the tortilla
Distribute the kernel corn over the top of the tortilla
Distribute the sliced mushroom over the top of the tortilla
Distribute the sliced cherry tomatoes over the top of the tortilla
Distribute the spinach or basil leaves evenly over the top of the tortilla
Distribute the sliced black olives over the top of the tortilla
Distribute the sliced jalapeno pepper over the top of the tortilla
Sprinkle the chili flakes evenly over the top of the tortilla
Sprinkle the oregano flakes evenly over the top of the tortilla
Drizzle honey across the top
Plce the tortilla on the baking sheet and bake at 400 ℉ for approximately 10 minutes or until the cheese is melted and the tortilla begins to lightly brown and get crispy.

GERD Friendly Vegetable Tortilla Pizza

Ingredients
One (1) 7” flour Tortilla
~¼ cup of low fat plain ricotta cheese
¼ cup low far mozzarella cheese, shredded or thin strips.
1-2 Tbsp of chopped green bell pepper (or any colored bell pepper)
1-2 Tbsp of canned kernel corn
1 medium sliced mushroom
5-6 leaves of fresh spinach or basil
1 Tbsp of black olives, sliced
1-2 tsp of oregano flakes
Directions
Place one tortilla on a baking tray
Ladle 1 the Greek yogurt evenly around it to within ½” of the edges.
Sprinkle the mozzarella cheese over the top of the tortilla
Distribute the chopped bell peppers over the top of the tortilla
Distribute the kernel corn over the top of the tortilla
Distribute the sliced mushroom over the top of the tortilla
Distribute the spinach or basil leaves evenly over the top of the tortilla
Distribute the sliced black olives over the top of the tortilla
Sprinkle the oregano flakes evenly over the top of the tortilla
Drizzle with honey
