The Goose looked great, and the texture and how Roasting is done showed how the flavor and ingredients helps everything else comes together,to make a great meal. The recipe made the perfect combination for the pig to come together nicely, and delicious to.

A definite highlight of this episode was when Mark was comparing and contrasting the suckling pig and the conventional roast pig at Wing Hap Lung. His explanation of the fine details was superb. And, it was good to know that the charcoal made a difference (as it should have). Another great sequence was when Mark picked up that roast goose drumstick at Yat Lok, as he was remembering that first roast goose that he had in 2014 (with the slow mo kicking in)...that was so poignant. As a long time viewer of Mark's channel, that was a special moment. It was about food and more at that point.

Mmmmmm... This has to be one of my top 5 favorite episodes for sure!! The grilled succulent pork looks perfectly balanced from the charred skin to the juicy meat & fat glazed in sweet drippings. Omgoodness!! I hasn't yet had the pleasure to taste grilled goose but it looks somewhat similar to duck which is one of my favorites. The way Mark took a bite into the bbq goose drumstick was pure gold hearing the snap from the crispy skin automatically made my stomach roar lol. Every restaurant displayed looks amazingly delicious & tasty for sure!! The unique techniques used to craft signature meats in each restaurant is so phenomenal!! Thanks Mark so much for your outstanding documentation of food & culture!! This was so awesome like always!! Safe travels & blessings to you your family!! Watching this video brought back memory of a similar joint in downtown Taipei Taiwan, famous for their goose noodle soup. As a child, I ate there a few times and each dining experience in this busy corner shop was rich and unforgettable. With the hustle and aroma in the surrounding blocks detectable as you approach this place, it just amped up your expectation higher looking forward to a great bowl of goose noodle soup.

Looking at the food of Hong Kong and now Taiwan Mark it seems like the major types of Chinese Food served in Chinese Restaurants in NYC and other large cities is heaveily rooted in Hong Kong and Taiwan style. I recall how Hong Kong's speciality is Cantonese cooking and I heard it tends to be sweeter.
