You remind me when I was single, and living alone, so many years ago. I rarely cooked for myself, as it is hard to cook just for one. So much food can get wasted. I ate out a lot in those days. I'm retiring from teaching very soon and looking forward coming back to Japan in the Spring for a couple of months (Kurume City, mainly as my wife is from there). Cheers and Happy 2025!
Your beef stew looks delicious. I love making beef stew but I make mine in a crock pot with braised chuck roast cut into pieces. It takes 4 hours to cook but everything is so tender. I think beef stew tastes better the second day after all the flavors have mixed well. Be well Sho!
About pouring stew over rice - I have learned in Japan that combination of potato, carrots and rice is absolutely delicious! Curry or beef stew with potatoes is really tasty over white rice, and the rice absorbs gravy very well.

If potatoes are exposed to sunlight before OR after harvesting they begin producing chlorophylls and solanine, a toxic glycoalkaloid. Chlorophylls are non toxic, solanine glycoalkaloid is very toxic and can cause headaches, nausea and if eaten in large amounts, neurological problems. I have extensive commercial horticultural experience and have worked on potato farms in southern New Zealand. you can just Google it if you like. Green potatoes are bad news, don't eat them and always keep potatoes in a cool dark place

Never had a problem tho also never had a problem with storage. Even just leaving them on the counter. Fun fact. We have Mr. Potato Head you can spot him in various places here in Little Rhody. The other thing is maybe it's a different type of potato . After all, there are so many different varieties . Happy New Year to you oh and ty for the horticultural lesson. LOL

It was the number one rule of the first potato farm I worked on, never to allow potatoes to be left even overnight after being turned out of the ground, they had to come into the shed as quickly as possible for cleaning and packing because of greening and especially the production of solanine. We were only allowed to get ten meters ahead of the pickup crew. Personally, I don't eat potatoes or potato products after what I learned in horticulture about them😂( Jersey Benny's is the main early variety of potato grown in Oamaru, southern New Zealand)

It may be the lighting but your potatoes have a slight greenish hue. To prevent this they should always be stored in the dark. x
It only means that they were exposed to sunlight during the growing process. Nothing to do with the way they are stored.
