Hey Matt, the best answer I believe, is that Tonal Center and Key are not the same thing. In modern music (jazz era/present), modal music-where the tonal center shifts to a note or chord other than our typical I (Major) or vi (Minor)- became an equal contender in popularity both in composition and appreciation from society. Our "new" I chord can be anything we want. There are a multiple ways to analyze, thus multiple ways to discuss it. I also consider what beats certain chords fall on in the phrase/song. I hope this helps.
