Moreover VWG has wheaty flavour whereas Washed flour method is neutral. Also vital wheat gluten is very expensive for home users. If you have passion for cooking then maida is better for the purpose.
It’s been 6 months I have left nonveg I have decided I’ll not have it but I was a huge chicken lover it becomes difficult sometimes I crave for it but I’ll make sure that I’ll never eat nonveg

It doesn't work like that. You can add some gluten powder to maida and then do the above method. Vital wheat gluten makes hard seitan compared to pure maida. You can get same results with whole wheat as wheat gluten. You won't like the smell of wheat along with heavy chewy gum like thing.
@@varsharao86 I have years of experience in pizza and soya chaap. That's why I share my experience with new people in this hobby. Knead the maida into a soft ball, apply oil over it and keep it for 2-4 hours for gluten to develop. After this more you knead, better the gluten. Then rest for 20 min and then immerse it in normal water for loosening the dough. Then you can easily remove the starch water after each wash. Finally you will be left with rubbery stretchy mass which can be stretched anyway you like.
@@varsharao86 Add some nutrela powder (preferably fortune or other good brands) into the gluten and knead well. That will give distinct taste of soya chaap available in the market.

The problem of maida is its starch. When you remove it, its pure protein. No need to worry after that. Cheapest source of protein which is readily digestible. One of the best option to add protein without adding more calories in your diet.
I have been wasting my time and energy in making healthy version of seitan by wheat aata. Ultimately I had to shift to maida for best results. If you remove the starch of maida then the only thing left is protein and 2% fat. So maida is not bad in this case. If you dont get pleasure in eating some food, why bother making it with so much effort?
@@mandar747 Add 550ml water to 1kg maida and make dough. Leave for 2 hours in room temperature. After that either keep it in the fridge or just wash it with cold water. Keep washing and changing water till starch is washed away leaving rubbery substance. Do not wash too much. Just as soon as dough reduces to about 600gm, keep it over a collander or strainer to drain exess water. Rest for 2 hours and then you can wrap the pieces on stick and simmer for 45 minutes. Or you can just cook the pieces in steam just like momos.
I have conducted numerous experiments and found that maida is the best base material. You can add one tablespoon of soya flour or soya nugget flour for the taste but anything beyond that would completely change the nature of seitan. Chickpea flour is more disastrous. Meaty texture only comes from gluten, when it comes from maida.
I forgot to add, the remaing water wheat mixture is not to thrown away. a special sweet i.e. halwa mi made out of it. you rest the liquid for thee to four hours. A layer of water will be on the top & very fine liqidy dough will settle at the bottom. Carefully remove the water from the mixture. In a large kadai heat pure ghee(requires a good quantity, carefully put the liquidy dough in it. on slow to medium heat, fry this mixture,then add sugar , strands of safforn, as well as cardmom powder. fry till it leaves the sides. it is ready to serve.
Nonveg only 2 days a week, only male member of the family , outside of house... baki all good as long ladies dont eat non veg and observe all brats 😂😂😂

You can but you wont be pleased by the results. Yield will be less and seitan would be hard to bite just like shoe leather. Taste wont be that nice.

It is wheat protein called glutin. Wheat contains high amount of gluten. This recipe can be made with wheat flour or all purpose flour.
