400g (14oz) - Pasta of your choice (I used shells)
1 Tbsp (14g) - Unsalted Butter
2 tsp (10ml) - Extra Virgin Olive Oil
7 - Garlic Cloves, Minced or Grated
1/3 Cup (80ml) - White Wine, Chicken or Vegetable Stock
400ml (13.5fl oz) - Thickened Cream (Heavy Cream, Whipping Cream)
120g (4.2oz) - Baby Spinach, Washed
60g (2.1oz) - Pecorino Romano Cheese, Freshly Grated
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
5g (0.2oz) - Basil, Picked or Chopped
Seasoning To Taste
Method -
1. Bring a large pot of salted water to a boil. Add pasta and cook for 1 minute less than the packet instructions.
2. Add the butter, oil, and garlic to a large pan. Place over medium-high heat, and while the pan is cold, allow the butter to melt and infuse the garlic. Saute for 2 minutes or until sizzling. Don't brown too much.
3. Add the white wine, chicken stock, or vegetable stock and bring to a boil, mixing well. Once boiling, add the thickened cream, seasoning to taste, and mix well. Bring back to a boil, reduce heat to low, and simmer for 10 minutes or until reduced and thickened.
4. Add the spinach, mix until wilted, turn off the heat & check for seasoning.
5. Add in the Pecorino Romano and half the basil and parsley, mix to combine, then transfer the pasta straight from the pot into the sauce, add some of the pasta water if needed and cook for 1 minute.
6. Serve in bowls, and garnish with remaining flat-leaf parsley and basil, pecorino Romano cheese, and cracked black pepper. Dig in.

It’s ironic that the original recipe for this dish is what made me discover Jacks content. I’m getting a lot of praise from my girlfriend and family for my cooking these days but it’s down to the chefs like Jack on UA-cam who have spurred me on.

Very delicious! We have a variation where you add a couple of halved cherry tomatoes (to the sauce) at the end. It gives an extra kick of freshness and a touch of sweetness to the dish.

Tried the Hungarian stew recipe the other day and it was delicious - added a tablespoon of tamarind just because! Washing up after wasn't so fun though 😆

Glad to hear you enjoyed it. Alcohol takes a lot longer to evaporate that people think and there will still be traces. This is not a problem for people that consume alcohol but there’s many religions, diets, mentalities that don’t want alcohol in their house or simply can’t have it. That’s why there’s always a substitute in my recipes for alcohol

Can you switch the olive oil for cold pressed rapeseed oil?
Looks delicious, though I try not to eat too much cream. Is there any we can use as a substitute to the cream?
This one is a little difficult to swap the cream for as it’s one of the main ingredients. I have had people in the past tell me they’ve used coconut milk and it worked. Personally I’ve never tried it with it so can’t recommend if it’s good or not

Did seafood last video and every time I have posted one, they flop in rankings and it’s degrading if I’m being honest. I try to do a mix of everything but I can’t be posting stuff that doesn’t do well. Really hurts the morale and motivation. I’m sorry

@willsoe Try using half fat creme fraiche instead. Obviously it won't be as rich but you get used to that and it makes creamy dishes less calorific. Save the heavy cream for special occasions.
Its sad that people 'stick to the rules'... Be inventive people, use stock instead of alcohol.
Use spaghetti instead of spirals. Use onions instead of shallots. Olive Oil instead of butter.

Nowadays, depending on where you live/availability, you can make it vegan. Not just for vegans but also for gluten and dairy free folks. This is a top versatile recipe. 🤍
