Very beautiful! Two questions: first, do you do these cuts on cold or warm dough? Secondly, all these Cuts seemed rather shallow, how is it that you get such excellent rise without an expansion cut?

1. Do I need to freeze the dough before scoring?
2. What is the oven temperature for the first bake? Should it be baked covered/uncover?
3. Why do we need to bake it first before the final scoring?

i'll definitely try that!! what kinda yarn/twine are you using? are you soaking it in water, so it doesnt burn in the oven?
Could you please to answer on a couple questions: with this oven do you change the temperature when you bake your sourdough? You put inside with door closed and then you move aside inside the main oven and place the second one into small oven. But what about the temperature? Do you use 250C and then reduce to 230C for example or you keep the same let’s say 230C all the way through baking? 2. Do you freeze your bread before doing these cuts for 4 hrs or can be 2hrs? -18C thanks Nina x

I have a question. You make a first decorative score, then you cook a little the bread and then you make deeper cuts. For how long do you have to cook the bread before the long cuts? After you put the bread again in the Dutch oven with the lid until it is cooked. Then, you cook the bread in the oven without the Dutch oven to make it brown. Are these steps correct?

Many sourdough bread resipe says 20 minutes with steam then continued by 20 minutes without steam

Yes. In a later video she gives instructions. Six or Seven minutes in oven then remove for deeper scores.
