  • This is a simple but beautiful potato dish made in cast iron that can be ready in one hour and thirty minutes from start to finish. Some who have seen my posts of this dish have also nicknamed it the ‘Potato Flower’. My roasted spiral potatoes and bacon in cast iron dish will work in any size skillet, and the sky is the limit as to how you can season and garnish it.     This has become my all favorite potato dish in my well seasoned cast iron skillet. I've added ingredients over time and now it is more of a one dish casserole type meal. I add cut up steak that has marinated with my favorite recipe, add already sautéed Portobello mushrooms, Anaheim pepper, jalapeno with seeds, red bell, onion and garlic. It's still a great recipe the way you make it though -- the options are endless. Thank you for the video ! I love your channel.....Phoebe from Arizona

    Really great demonstration of how to use common ingredients in a different way. As you said, it's a little labor intensive, but c'mon - it's cooking. If you're going to go to extra trouble for a dish, you want the end result to be worth it, and this certainly is.

    I really want to try this. the only thing I would change is layering the seasonings to make sure every potato is evenly seasones

      William Ives You are right William. I have made this three times, today being the fourth. I made it as instructed, but it was missing seasoning. If you think about it; its only 1/4th covered. Since then I have seasoned them fully in a prep bowl. World of difference.

    My goodness. I did your crosscut hasselback potatoes and they were wonderful. But these spiral potatoes are so delicious. I made them today for my very picky son in law. He said he was glad he stayed home from work today. From him this is the greatest compliment. Thank you for such wonderful recipes.

    Jeff, that looked good. I do the same thing in my 10 1/2" chefs skillet. Seems to be a little easier for me since the sides are slanted more. I love your videos.

      +Volusia-ev FYI, butter was poured all over the potatoes after it was mostly cooked... I consider potatoes an accompaniment to butter, salt, and black pepper..... lol

    I did this today and am pretty excited about it. I used diced unions and put them in with the butter (at the same time that you did it) and I used pepper jack cheese at the end and it turned out pretty good. Not better, just a variation that worked for my wife and myself. Thanks for the instructions and please never stop. I will continue to copy you proudly. LOL

    Mr. Rogers, What a lovely dish. Being Italian, I wonder what it would taste like if I replaced the bacon with pancetta, cheddar cheese with a four cheese Italian mix a la Trader Joe's and sprinkled chopped rosemary over the top. Oh you are an inspiration & lovely jazz as well. Many thanks.

      +Harvey Davis Or maybe they just didn't like the recipe, or the techniques used? Overall, I enjoyed this video, nothing in it was worth hitting the dislike button over. But that doesn't mean that it was perfect, or that any of the minor issues that caught my attention wouldn't possibly bother someone else a whole lot more.
      Why so antagonistic over something so minor?

    Mr Rogers, your videos are wonderful! I love watching them and getting inspiration for dinners and book club meals, and learning some of your excellent technique tips. I did my own version of this early last month, and I have to say, one of the BEST things (along with the taste of the bacon and paprika) is seeing people react to the presentation of this rustic dish served in the cast iron pan (your collection by the way is very impressive)! Will definitely be subscribing and looking forward to more videos!

    I've made these three times since I saw your post on Cast Iron Cooking. These are so good. We love sweet potatoes so I'm thinking of trying it with some and at the end put on some butter, brown sugar and for my daughter some marshmallows. Yum!

    Looks good Jeff. I think I’ll make this for supper tonight. If you take a spoon and stir the sour cream really good and fast, it’ll come out nice and creamy so it’s prettier when you spoon it out. You’ll be able to get that little Dairy Queen flip on top! 😁

    TiP: I'm going to mix up all those seasonings in an empty shaker and coat my pieces front and back so they are thoroughly covered in seasoning not just on 3 quarters of one side, but this looks amazing.

    I'd like to ask.... why did you use peanut oil? Flavor versus preference? Is olive oil okay to use since you aren't frying it at a high temperature? Great video! Can't wait to watch more of them! :)
