Ready in just a few minutes, they're tasty, soft, warm and fluffy - and perfect for when you're craving something sweet, but don't have the time or energy for full-on baking. No need to turn on the oven with these - all you need is a microwave and a coffee mug!
Today, I'll show you 5 of my favourite flavours that you can try at home yourself. Or you can easily customize these with your own favourite flavours and toppings. Enjoy these for dessert, as a snack, or even for breakfast!

DIRECTIONS:
► STEP 1: In a coffee mug (recommend at least 12-oz), combine and mix dry ingredients. Then, add wet ingredients and stir until it turns into a smooth batter.
► STEP 2: Add any mix-ins or toppings.
► STEP 3: Microwave for 80 seconds or until cooked (cooking times may vary depending on microwave).
► STEP 4: When the cake is ready, take it out and let it cool down for a minute before enjoying.

► All-purpose flour (1/4 cup, 31 g)
► Baking powder (1/2 tsp, 2 g)
► Ground cinnamon (1/8 tsp, 0.25 g)
► Pinch of salt
► Almond milk (1 tbsp, 15 ml)
► Vegetable oil (1 tbsp, 15 ml)
► Maple syrup (2 tsp, 10 ml)
► Vanilla extract (1/2 tsp, 2.5 ml)
► Mashed banana (1/2 ripened banana, 59 g)
Toppings:
► Walnuts (1 tsp, chopped, 2 g)
► Mini chocolate chips (1 tsp, 5 g)
► Banana slices (optional)

#2 - VANILLA STRAWBERRY (330 calories)
► All-purpose flour (1/4 cup, 31 g)
► Baking powder (1/2 tsp, 2 g)
► Pinch of salt
► Almond milk (1/4 cup, 59 ml)
► Vegetable oil (1 tbsp, 15 ml)
► Maple syrup (1.5 tbsp, 22 ml)
► Vanilla extract (1/2 tsp, 2.5 ml)
Mix-ins:
► Sliced strawberries (2 tbsp, 30 g)

#3 - LEMON PIE (396 calories)
► All-purpose flour (1/4 cup, 31 g)
► Baking powder (1/2 tsp, 2 g)
► Almond milk (3 tbsp, 45 ml)
► Vegetable oil (1 tbsp, 15 ml)
► Maple syrup (1.5 tbsp, 22 ml)
► Lemon juice (1 tbsp, 15 ml)
► Lemon zest (2 tsp, 4 g)
► Vanilla extract (1/2 tsp, 2.5 ml)
Lemon glaze topping:
► Powdered sugar (2 tbsp, 16 g)
► Lemon juice (1/2 tsp, 2.5 ml)

#4 - CHOCOLATE BROWNIE (465 calories)
► All-purpose flour (3 tbsp, 22 g)
► Unsweetened cocoa powder (2 tbsp, 10 g)
► Baking powder (1/4 tsp, 1 g)
► Pinch of salt
► Almond milk (3 tbsp, 45 ml)
► Vegetable oil (1.5 tbsp, 22 ml)
► Maple syrup (1.5 tbsp, 22 ml)
► Vanilla extract (1/4 tsp, 1 ml)
Toppings:
► Blocks of dark chocolate (1 tbsp, 15 g)

#5 - COFFEE CAKE (465 calories)
► STEP 1: In a bowl, mix together dry ingredients. Then, add wet ingredients & stir until it turns into a batter.
► STEP 2: In a separate bowl, prepare Cinnamon Swirl Mixture by combining 2 tsp of brown sugar, 1/4 tsp of ground cinnamon & 1/2 tsp of melted butter. Give it a mix, then set aside.
► STEP 3: In a third small bowl, prepare Cinnamon Sugar Topping by mixing together 1 tsp of brown sugar with 1/2 tsp of ground cinnamon. Mix & set aside.
► STEP 4: In our coffee mug, add half of the batter mixture.
► STEP 5: Layer half of the Cinnamon Swirl Mixture on top & mix it in with a toothpick or fork.
► STEP 6: Add in the remaining batter mixture, followed by the remaining Cinnamon Swirl Mixture - again, mixing it in with a toothpick or fork.
► STEP 7: Top it off with the Cinnamon Sugar Topping. Microwave for 80 seconds or until cooked. Let it cool down for a minute before enjoying.
Batter:
► All-purpose flour (1/4 cup, 31 g)
► Baking powder (1/2 tsp, 2 g)
► Pinch of salt
► Almond milk (2 tbsp, 30 ml)
► Unsalted butter (2 tsp, 10 g)
► Maple syrup (1.5 tbsp, 22 ml)
► Vanilla extract (1/2 tsp, 2.5 ml)
Cinnamon swirl:
► Brown sugar (2 tsp, 8 g)
► Ground cinnamon (1/4 tsp, 0.5 g)
► Unsalted butter (1/2 tbsp, 7 g)
Topping:
► Brown sugar (1 tsp, 4 g)
► Ground cinnamon (1/2 tsp, 1 g)

How long do they need to rest out if the microwave?
@ottocarmanjones7143 Hey! I usually let them sit for about 2 minutes or so after cooking - that’s usually more than enough time to cool down!
What a great tutorial. No unnecessary filler chat and best of all NO music. Thank you, thank you, thank you. Great sounding recipes AND a sensible amount of sugar and baking powder too. So many recipes nowadays use ridiculous amounts of both and, too much baking powder (or soda) tastes disgusting - at least to me. I just have to assume some people aren't as sensitive to the taste of it as l am. My only criticism is while it's great you've put the recipes on screen, it would be great if you could also pin them so they can be easily found. Thanks.

I didn't even finish watching the video before I went to make the chocolate one! 😆I made it low cal by subbing cottage cheese for 2/3 of the oil, and using low carb flour and sugar free maple syrup. It needs a spoonful of sweetener in the dry mix, I think. Not quite sweet enough using just the maple syrup. Still a tasty little dessert, once it cools off enough to eat!

Hey there! I personally wouldn't advise using a paper cup in the microwave - it's best to use a microwave-safe mug or container (such as most ceramic or glass mugs). Hope that helps!

I suggest using an oven-safe container (such as a ramekin) and cooking it for 10-12 minutes at 340F (cooking time may vary depending on your air fryer). I have tried two recipes so far, but I wont be putting them in a microwave again. A microwave seems to react with the gluten in the flour,they are just stodgy cups of ??? I dont mind waiting a while so I will just bake them in the oven.

Try heating up a stick pot with lid covered when you start prepping, when you start baking, it should be hot enough with heat retained in the pot and you should be good to bake pretty much anything, that's what I used to do when I didn't had oven for baking

All of the recipes use all purpose flour. Oat flour would be healthier and could have been mentioned as an alternative. But they do look delicious.

You really repeat yourself so much. It makes these videos feel like a compilation from other videos. Not referencing the previous recipe during the current recipe makes it seem really disjointed. You don't need to say "unsweetened almond milk" 5 times in one video, it seems really forced, almost like the VO was performed by AI. Relax a little and add some personality in like "yes, again some unsweetened almond milk, it's in all of these!" or something like that. It will make your videos a lot more normal.
I disagree vehemently, him repeating himself is super useful because I can just pick the recipe variant I want and follow along - I don’t have to rewatch the whole video to get the full recipe.
Why say this????? There is no need. The videos are great and the recipes are amazing!!!!! Why do some have to find fault in everything. Take the videos for what they are...great recipes. If you do not like the presentation...DO NOT WATCH
