@@ApronstringsGayJordan gay have you ever seen Darcy at the purposeful pantry dehydrate caramelized onions to use like for the top of salads and light green bean casserole and casseroles and stuff might be worthwhile I think she's got a whole playlist of stuff and I'm sure she's got the caramelized onions listed might be something that you might want to consider I know you'd like the crunchies on the casseroles in the salads

I am waiting a month to open a jar and try them. Since the video several have told me that theirs were not good.had a terrible smell. I watched 2 channels that I really trust and they both did them the same way. So, I thought they were ok. I will update when I open mine. ( I have also had positive comments as well) The issue, I think, is the butter and no acid . I thought about putting white wine in....wish I had. I am just concerned at this point. I'll be glad to open and check mine. I wonder if ghee would work better.....
Hi there Gay! I haven't tried canning caramelized onions yet, only the "onion jam", which I didn't care for. And I agree about the Vidalia's being brown in the center. But!, those Yellow Onions have me crying so bad I hafta leave the room. I need to make caramelized onions because I like butter! thanks again! .

Love caramelized onions. I put them in my meatloaf, spaghetti sauce, sandwich and I also save my broth and use when I cook a roast, beef or pork. Bet your kitchen smells so good.

Oh my goodness. If you had to do those for 70 minutes, I hate to think how long I’d have to do them for my altitude. I’m at 5600’ 🤯 I had to go research this some more. I think I can do it at the same process time and I use a 15# weight. I gotta try it. 🤞🏻🤞🏻

I have canned caramelized onions 3 times and they all have turned out terrible, we cant even handle smelling them. Like a sulfur smell or something, very pungent. I have tried 3 different versions from people on youtube. I attempted 1 last time not long ago and still have yet to open a jar lol, Im nervous! I can french onion soup which is so amazing and onion broth and that turns out great too but something about the caramelized onions just hasn't worked yet....hoping this last batch is a winner. This last time was a small batch just incase. It is a lot of work canning and I hate when it doesn't turn out.
My neighbor and her daughter did this after watching videos about 2-3 years ago, I was there when they opened one, it smelled horrible, seals really good but smelled horrible, opened another, the same. They threw them all out, realized it probably was not the safest thing to can after doing some research. They are rebels but after doing the research the butter was a big no no and onions low acid. I gave them a recipe from the newest Ball book for canning French Onion Soup, I myself have made it about 3 times now, it actually is really good and will allow only 1 tablespoon of butter, you can strain the juice and now they do that and use the onions, but the recipe has been tested and adds wine for the acid, and is pressure canned. It might be a good idea to wait before you can a whole bunch of it and you have the same problem or a safety issue. I would hate to see you waste all those tears, time and money and not have a safe product. You be safe Gay, love you.

I love caramelized onions! I have never canned any though. I know what I will be doing soon. At what temperature did you set the roaster oven?
I had it on 225 for a while but that was too hot on mine. So I went down to 200. It took about 18 hours.

Any tricks to keep from "crying" when you sliced your onions?
Naw. To reduce the strong onion smell n taste you pour boiling water over them ten seconds then drain n rinse. It takes it out that strong taste

Thank you for the info. The ones I watched are big channels. But. I’ll wait n see. I wondered about the butter I almost added wine. Wish I had 😩
