- Dumpling recipe
2 cups self rising flour
1/4 cup butter crisco or butter
3/4 cup whole milk
mix into a biscuit dough. pinch off and drop into lightly boiling seasoned chicken Broth and soup mixture. plaxe lid and let cook lightly for 10 minutes. add chicken back in and enjoy

I used to argue with friends that the flat ones are noodles, they are not dumplings! Lol. To me fat and fluffy is what a "DUMPling" should be. It's just what that name sounds like, fat and fluffy. It was my favorite meal as a child and it had no vegetables. Thank you for this, my mom got sick before she could teach me and I could never find a recipe like hers!
Yes!!!! Thought those were called noodles! Didn’t learn any different until I watched a video that said dumplings and was shocked haha

It's so hard to find fluffy dumplins! I love fluffy!ive not ever found a restaurant that has this kind of chicken and dumplings. I'm in Texas.
Self rising is all I use. When my mama didn’t have self rising she would add her salt baking powder soda just like making biscuits . It’s not nothing new. We always used buttermilk at the end when all was in a pot she and I pour a small can of carnation milk. When we made the broth we used whole chicken. We think the breast alone makes it to dry. I’m 70. The fluffy dumplings have been around I know over 100 years . My mam was 83 when she went home to our Lord .

My mom just used salt and pepper for the seasoning for her chicken and dumplings. My mom rolled hers out and cut them into strips and then cut them into small pieces. She used self rising flour and they still puff up. She didn’t roll hers into small balls.she never put soup in hers . Just boiled her chicken and added some chicken broth to the water . I miss her and her dumplings so much.
I always keep a small box of Bisquick in the pantry. I only use it for dumplings. 2 cups Bisquick
2/3 cup of milk. I add chives to batter
Bring broth to a gentle boil drop by spoonful put lid on for 10 min and lid off for 10 min and your done. These are light and airy

This is the best. The inside of the dumpling looks like a biscuit does inside. These dumplings in this video looked more like dough inside. That’s why I prefer bisquick. Or maybe they needed to cook longer. It’s usually 10 minutes with the lid on then 10 minutes off to get the biscuit on the inside look
You're absolutely right that's how I make my dumplings with Bisquick my mother did it I might rent mother did it so and they're so good I like the flat dumplings to the doorway wants
I've always used Bisquick to make Chicken 'n Dumplins. Easy. Light. Fluffy. Rich broth from a whole chicken boiled in water, then deboned. No additives outside of black pepper, little salt. Like you, I serve with slaw, & fresh green beans, (no ham or alternate flavoring.). Never anyone once ever complained, nor, was there any ever left over. Yours looked delicious! I thank you for going slow enough to share how you did each step. I will definitely love to try your version.
We always made the fluffy cloud dumplings, only difference was Momma added carrots and celery to ours. So comforting! I miss her so much & fondly remember her every time I make her chicken and dumplings 💞💞

Mom & Grandma always made big, fluffy dumplings. Didn't know there was any other kind till I was grown & got out in the world. Bring liquid to a slow simmer, spoon on dumplings, 10 min with lid on, 10 mins lid off, do not stir. Perfect everytime
Omw! I thought we only eat it here in South Africa! I never did it with chicken. Only with lamb. Yes Donna, slow cooking when you add the dumplings! Mmmmm! I'll definitely try it with chicken!

I have made dumplings from scratch and now that I am older (73) I have started taking the easy way out.
Once my chicken or other flavors such as potatoes and green peas are almost ready to perfection I take either a 5 piece or 10 piece can of Butter Milk Canned biscuits(not flakey buscuits..home style or southern style) out of the refrigerator and cut each biscuit into 4 pieces. Let them sit just a few minutes until they begin to rise and then I place them one at a time into the broth.
Let them cook cover about 15 minutes, uncover and cook 5 to 7 more minutes until you feel are done.
My husband laughed tge first time I did this until he ate a couple...then a few more and then finished off what I hadn't eaten.
Fast, easy and just as good.

Well, when I was a boy my grandmother was always in charge of cooking because both parents worked. So Grammy used to make soft fluffy dumplings in beef or chicken stew and we would pull the dumplings off of the top of the stew and set them aside. Once we had finished our stew, we would place a dumpling on a saucer and pour molasses over that dumpling and that was our dessert. YUMMY. I still make them today. and I am a recycled teenager. LOL Thanks for sharing.

My Grandmother made what we called flat dumplings. My very favorite. When I graduated from high school she asked me what I wanted. I said Grandma I would love a pot of your chicken a dumplings 😋🙂🤪🥰
❤ my grandmother Nora taught me how to cook; I remember how she made everything homemade…. This recipe closely resembles her dumplings😊 so very delicate and delicious 🎉 the dumplings never lasted long, no leftovers, and the men always thought she should have made another pot full!😮 which made me remember how I churned the butter for the dumplings for 2 to three hours in a brown wooden butter churn with a whack-a-do paddle after Papa finished the milking😅
A few years ago, while substitute teaching, a boy whose mom had died, asked me to make him some chicken and dumplings. The teacher of the young kids heard about his request. She printed off a recipe and brought it to me. It was really good. One unusual ingredient in it was a bit of parmesan cheese and of course the biscuits.

I use my mom's recipe, flour, baking powder, salt, eggs. Mix until just holds together good and dump out on floured surface, cover and rest for 10 minutes. Roll out to about 1/8" thick cut 1/2" wide and dust with flour. Let dry for 15 minutes and carefully add to pot of boiling stock. My uncle when traveling always asked for chicken and noodles or big dumplings.
Maybe it's not as popular, but when I'm stewing up a hen, I love to add fresh herbs: (parsley, sage, rosemary, & thyme), a chopped yellow onion, chopped celery stalks, & a couple of sliced carrots, sliced mushrooms, minced garlic, half chicken broth (my own), & half water. I do also use Better than Bouillon, & a can of condensed cream of chicken & cream of mushroom soups. I use Bisquick & milk for the dumplings. When the dumplings are done, I stir in some frozen petite peas. This rib-sticking meal is one of my family's favorites.
All those ingredients sounds like you’re make a chicken pot pie., definitely not how they did it in my Mom days…, just saying…..

I grew up having the southern dumplings, meaning the flatter squared ones. I married a man from Chicago and he grew up with the fluffy ones. Being a good wife, I make the fluffy ones anymore. I love them both❤
Tiny bit of Tarragon seasoning makes any chicken amazing! Only a little goes a long way bit makes Chicken salad or chicken and dump,inns or chicken noodle soup taste amazing! I put maybe a pinch in any of it!
You can also use those canned biscuits to make donuts. My mom did that. Toss in cinnamon sugar or powdered sugar - yum!
I have a funny story about going home to louisiana and seeing my mono before she died. She made breakfast and I smelled the bacon and went out. She said, im makin “whop biscuits” . I said , mono what’s WHOP biscuits? I mean, I grew up my whole life and she always made biscuits the same ole fashioned way and they were delicious.
She said, “you see this can? “And she whopped it on the side of the counter to to open it. Lol
She said you take canned biscuits and whop em on the side of the counter .

I love chicken and dumplins. All 3 of my grown children and their families love them too.
Being recently retired, I do most of the cooking for Sunday dinners when the whole family comes over in early afternoon. They love Nana's cooking too, but of late, Papaw's been in high demand with continuing requests for gumbo, chili beans, chicken and dumplings, spaghetti, beef stew, green beans with smoked ham hock, and other dishes.
These are cherished years at our home. Our children are young parents and our grandchildren are ages 5, 3, and 1 month. Family time like we have on Sundays is priceless, so I want the family to be well fed and enjoy time to relax and visit together. I usually make very large amounts of everything because they always want to take some home for everyone and the men like it for lunch at work on monday. I usually use a 16 quart pot for the main course dishes to have enough.
I love knowing they are being fed good food when most young parents these days rely so heavily on processed and prepared foods.
Thank you for this video and for sharing your family with viewers. Your dumplings look perfect and I prepare mine in much the same way. And yes, I have and still do use canned buttermilk biscuits for dumplings from time to time.
BTW, I never let a whole chicken being froze stop me from using it for chicken and dumplings. I just put it in the pot and bring it to a boil, then simmer it on low until the meat falls easily from the bone.

I always add yellow food coloring to make them look richer, nothing wrong with white but mom run a restaurant and they sold better.
I make mine just like granny Karma’s UA-cam videos. Two ingredients!! 2 cups of self rising flour and 2 cups of heavy whipping cream. Mix together, turn out onto a floured surface, knead 10-12 times, pinch off and roll into golf ball size dumplings. I always use chicken thighs because they give the best rich broth. I actually like chicken liver cut up in mine . Use about 4-5 cups of broth seasoned with salt, pepper, onion powder, poultry seasoning…. a teaspoon of each. Granny Karma also adds onions, carrot and celery while she’s boiling her chicken. At the end she adds one frozen bag of peas and carrots. Very yummy.
I just made chicken and dumplings in my slow cooker, beside Cream of Chicken soup, and herbs, I added Better Than Bullion to the broth my chicken was cooking in. The broth came out SO beyond delicious, I could have served it by itself!

Better Than Bullion is the best stuff! The roast beef really has a deep beef flavor. I always use it instead of cubes now, even though it is more expensive.

This is how I do mine. Except I use chicken bullion cubes instead of Better than…. Also my dumplings I do somewhere in between the flat ones and the huge ones.
It was thanks to you, Leslie, that I was finally brave enough to make chicken and dumplings - mostly for my husband because his grandmother used to make them. I'm just now having the last bowl of them. Next time I know to not make the dumplings so big (mine were bigger than a baseball!), and to have things better organized. Thank you for helping me to show my husband how much I love him by making something he has a very fond memory of having as a child 💙

MY mama was from the south but was raised in Indiana shes gone on with Jesus now, said never said to stri the dumplings and as long as i can remember she never rolled out her dumplings so im wondering if it really a southern thing. Also as long as ive been watching youtube and ladies say they are southern cooks i have never seen one fix soup beans cornbread fried potatos for a meal and put the beans cornbread and fried potatos with some onion all in one bowl together!! nothing better! im beginning to think we may be more southern then some of you all!! and before i get hate this is aimed at Leslie i love her and PB im just say thats all!!:)

What I have recently discovered is that my family cooked Appalachian, not southern!!! In my opinion, it’s so much better 😂🤣. I have been watching Celebrating Appalachia. You might enjoy it 💗

Ellen, I had an aunt that could make the best cornbread I've ever eaten. When it was cold, you could eat it without a drink and not get choked. It was like cake. All I know about it was she used lard/bacon grease, cake flour, buttermilk and corn meal, egg, etc.. Always in cast iron skillet. She left this world & took recipe with her. We've tried different things but never could duplicate it. Sure wish we could find this recipe. Also, beans & cornbread is 1 dish, not 2 separate ones!
I have only made fluffy dumplings because that's what Mama made but I have never made fluffy dumplings like that. Mama always made the dough looser and just dropped them into the boiling broth and covered the until they were done, about 20 minutes but I'm going to try your method today and I'm excited!
You make your dumplings my fav way. The kind that are little biscuits or fluffy one. For those who need to roll em out suits you but I say thats chicken and noodles. Good to but I'll put down a bowl of those fluffy dumplings. And yes 1/2 a chicken freezes great. Theres your noodles 1 night and dumplings another. 2 meals. Id make a whole chicken and pick it good and maybe a bit extra. I love having extra chicken in the freezer. Great time saver. I love it. You can do SO much with chicken. Think actually ill do that. 1 in instant pot and 1 in crock pot.
Yeah, and the flat ones taste like a noodle too, so why go trough all the trouble-just drop some egg noodles or pasta in! To me, the flat ones are not a Dumplin nor do they look or taste like one.
You probably will think I’m crazy, but I love your natural fingernails. You are so wholesome, so genuine, and so sincere…. Nothing wrong with pretty nails! But the natural look just suits you!
My favorite are the thin dumplings. My grandma used self rising flour and hers were slightly thick. My husbands family always used all purpose flour and made them thin. We have never used can biscuits when we were in a hurry we used Anne’s frozen dumplings instead. They come in a red box and are in the freezer section of the grocery store. Now that the kids are grown we have more time and I just roll out my dough thin with my great grandma’s wooden rolling pin. God bless y’all.

Real chicken and dumplings are pastry made of salt, flour, warm water , parsley opt. Kneaded into a pastry and rolled out thin, cut in strips and boil for 30 seconds then drop the next batch in. When all in boil for 2 or 3 minutes, stirring often. Serve

I love canned biscuit dumplings! I'm 68, and when I was a little girl my mom occasionally used canned biscuits for dumplins and I loved it. I still fix them like that occasionally.

Me too! I'm 68 also. My Grandma also used to make Blueberry or Blackberry Dumplins. So when I'm in a hurry, I use Can Pie filling( Or even Peach & Berry combination!) and Can Buttermilk Biscuits for a quick Southin Dessert!

This is one of my favorite meals!!! My family likes the more flat and fluffy dumplings. I make mine out of bisquick. My grandmother always used the flour and water for hers. I think they’re delicious anyway I can get them!!
I cook my chicken in broth and my dumplings are cooked as fluffy potato gnocchi pillows (4 boiled Yukon gold potatoes, 1 cup flour, 1 egg, salt pepper and 1/4 cup drained ricotta no shortening or butter all mashed together). I roll out my dough, cut into small rectangles, 2” long and 1” wide, then add to my chicken broth to cook. Our family loves this! Chicken and potato gnocchi (dumplings?)

I didn't know there was flat dumplings until I was over 20. I love the fluffy dumplings.
I always put half & half in my pot with dumplings, it makes up like a gravey. Just great. I drop my dumplings by the spoonful and always put lid on with burner turned down to simmer. Never stir like you said. This makes big & beautiful dumplings. I hope you try it like this one time.
I do too and add a stick of butter to the broth.do drop biscuits and the juice butter and dumplings makes a creamy broth that is sooo good.
My grandmother on my dad's side of the family, we called her Granny, made the best chicken and dumplings. Hers were the first I ever tasted. This would've been in 1968 or 69. Having lived through the great depression, she had many sources of the best fresh farm ingredients because with money short, people bartered for what they needed. She kept in touch with many of her farm friends and I rode with her and my Papa on many trips to buy products like fresh farm eggs. Papa prefered double yolked brown eggs when he could find them. Also, local honey in the comb, hand churned butter, and milk fresh from the cow including the heavy cream on top. They would buy bacon, ham, hog jowl, and hand made pork sausage from hogs that were raised, butchered, and cured on the farm.
Granny would use the hand churned butter and milk cream in her chicken and dumplins. Her dumplins were made with Martha White flour, lard, and the fresh milk. She boiled the whole chicken and hand pulled the meat. Her dumplins have always been my benchmark. I've never matched them yet but I keep trying.
I too use either heavy cream, half & half, whole milk, or even evaporated milk in my broth, whichever I have on hand.

I’m a southern girl and I LOVE Chicken & Dumplings. My husband would rather have noodles instead of the dumplings but not me!! I fix it the way my husband likes it a lot, but next time I make it they will have dumplings! I fix them the way my Grandmother Hill made them! I’ll send you my recipe for the dumplings if you want. My Grandmother Hill’s Dumpling recipe is over 100 years old!! I’ve been making them now for about 43-1/2 years!! (I’ve been married for 43 years & 6 months & 2 weeks!)

I love it. Using pillsbury biscuits instead of from scratch. I don’t really like to cook, so anything I can do to take the drudgery out of it, I’m all for it. My problem is I don’t think about cooking until I’m hungry, and then it’s too late to cook, because I don’t want to wait an hour or two. My mother started cooking at 3:30 to eat by 5:30. I’m busy doing other things at 3:30! I can’t think about food and cooking. This is what I’m going to make tomorrow as I sit here drooling. I haven’t had chicken and dumplings since I was a kid. 👩🏻🍳

You can use instant potatoes mix to thicken the chicken with! They take on the favor!
So weird…I just made chicken n dumplings last night and here this pops up in my UA-cam tonight. My mom always made the fluffy dumplings and I liked them, but I make the noodle kind. They are like the chicken n dumplings at Cracker Barrel, with the thick sauce/broth (not much sauce either - just mostly chicken and dumplings - that’s it). I also used chicken breasts because that’s what I had, and I simmered them like you did. It is so good - like chicken noodle soup on steroids! We had the leftovers tonight. Even the dog absolutely loves it!

U can use Bisquick for those who don't know and make the biscuit recipe on box and drop by the spoon fulls slowly so they don't stick together.

I love love chicken n dumplings. My Grandmother used to make them the old fashioned way. Oh man can't beat them. Soo good!
Beef chunks are handy to do that and ground beef. I need to buy freezer containers on freezer bags. People meal prep alot. I need to start. And popping in a casserole sometime. Gotta eat and some times you dont wanna cook. Fast food but your own cooking and cheaper than pizza and healthier food. And I like my cooking.

When your chicken is hot, use your beaters in a bowl for perfect shredded chicken!

My family loves the fluffy dumpling. I’ve always put peas and carrots in mine(probably because my grandma did). I’ve done the fridge biscuit dumplings too they are good. Usually I have to add a second batch of dumplings to satisfy everyone. Your recipe looks very good. I’m hungry for chicken and dumplings now.

@@pinkbutterfly6878 me too! I’m not only lazy, I really hate to cook. The fact I can use canned biscuits is such a plus and a huge time saver. Interestingly, my mother is from Virginia, made perfect fried chicken to die for, but never made dumplings. My Italian aunt made them all the time in her beef stew.

I just wanted to say that I made this today, or I should say that I finished it today. I did end up waiting and making the dumplings today and adding them in fresh. I wasn't feeling good today but I suffered through so my son and granddaughter could have the chicken and dumplings that I promised them. I ended up making a double batch of dumplings with four cups of flour and 1 1/2 cups of milk plus a hefty half a cup of butter flavored Crisco. I made a pretty tall pot, about 1 1/2 or double the size of your pot. Plus I ended up with 48 dumplings. They weren't golf-sized but they were a good size. In this family we love our dumplings and I always have to have extra. Get this, I made that big giant pot for three people. But of course there will be leftovers to be taken home. This recipe was good, but I actually doctored it up to make it like my family would like. Instead of adding a can of cream of chicken soup I made a small slurry with cornstarch and water. I also added some chicken bouillon and some of that better than bouillon Italian herb. That made the broth taste so good. Then I also added some Italian seasoning into my dumplings. OMG those are some very scrumptious dumplings. Thanks again for making chicken and dumplings for us so we at home could make it for our families.

Always had fluffy dumplings. On a trip to Branson Missouri, a iconic restaurant said their c&d were amazing.. My 89 yr old mother could not believe solid thick dumpling, broth had a odd harsh flavor. We just could not let her finish bowl. Regional cooking is real.
Pretty sure you could put your frozen whole chicken in your pot covered with water. It will thaw during the boil no problem. I love chicken & dumplings! Thank you for the recipe... Yum!!
I love the cheaper store brand biscuits for dumplings. They work great also. I love Bryant's statement.. I don't discriminate, exactly good cooking is good cooking.

Leslie, I love amd make the fluffy dumplings! I use everything you do except I use reg Cisco which I keep refrigerated. Those look so yummy! Tfs!
Walmart sells large 10 pound bags of frozen chicken quarters which equals 8 each for about $7. I seperate and freeze them then throw 2 or 3 frozen in my instapot and it makes the best broth ive ever had. I remove and de-bone the chicken and make homemade soup all the time for my grandbabies. I add carrots, onions, celery and spices. And you can get the small spaghetti style noodles for about .40 cents each. It looks exactly like Campbell's soup but is soo much better and healthy.

Where I come from dumplings were called drop dumplings, like the ones here. Noodles are rolled out thin. I like them both.
Dumplings all over the place are amazing! Some are like a moodle and some like a puffy cloud all are delicious and also a surprise. My neighbor added veggies when utcwasc a chicken casserole. Stove top. Mno veggoliesxandcitxwas simply chicken v and dumplings. My mouth is watering!
I like fluffy yet a little chewy. October is my birthday month so Chicken & Dumplings is my dinner with a German Chocolate Cake. Cool weather in October so it's a perfect dinner.

Instead of milk I use the chicken broth to make my dumplings. Sometimes I roll them out and sometimes I just pinch and drop. So good!
