    This was amazing. These communities are the forgotten people. No one in the political world is rallying for them - they've been hit hard by many factors. Yet, they dig in and lift themselves up and find ways to overcome all the obstacles in their path and they do it with a lot of style! They refuse to quit. This was fabulous. I want to go there and try this food. It looks fabulous! I can only imagine the hours of work it took to make this video - it was wonderful!

That tip about smoking the chicken wings INSIDE the chicken is *GOLD!* I'm kicking myself for never thinking of it myself, but when you see those things... you realize how much skill a person has. This man doesn't only have knowledge, *he has wisdom!*
      ...wisdom is gained by experience and sticking with what works... the tips and tricks learned along the way!

      @@BehindTheFoodTV He loses points for saying that beans don't go in Chili .... haha. He is fantastic! (Chili preference is like Biscuits and Gravy or whether or not sugar belongs in cornbread. As long as it tastes good, great ... but still gotta give people a hard time to continue the feud!) 😆
      Also, my grandfather was a trucker and would bring regional sodas home all the time. I was ahead of the game on Vernor's Ginger Ale (Michigan and I think norther Ohio), Ale81 (I still buy a case of glass bottles when I go into Kentucky!), Cheerwine (NC, best cherry soda *on the market*, fight me! The cane sugar version stays fizzy longer than the corn syrup version. I swear it tasted better when I lived there in 07. 2 liters wouldn't last long enough to lose fizz, lol), Big Red (Alabama), and many others. Those started being distributed in TN where I live, so they're the ones off the top of my head. He would always bring back regional things from wherever the truck took him because he liked showing me that a world existed outside of rural Tennessee. When I got older amd was able to travel on my own, I already had a sense of seeking out "What makes this area unique. What do they enjoy that doesn't really travel outside of this area?"
      Your channel is a good example of those memories (and lessons) in video format. Happy to be a new subscriber!

    Al, I want to first Thank you for going off the beaten path and visiting this bbq joint. As a Kentuckian this video tugged at my heart! I have recently started watching your videos and this one was vastly different and that’s a positive thing. This is a hard working family that has had to work for everything. I love how you shown the true Kentuckian and not some hillbilly that everyone stereotypes in Eastern Ky! I have gone to the Gorge a few times but I’m packing the family up to visit this joint ASAP!! Thanks again for capturing the real person in this video!

    Holy moly! This might be one of your BEST videos ever.
    I loved the story behind the man.
    I liked his journey through life.
    I liked how the man reinvented himself and adapted to a new way of life after the jobs and the coal mine went away.
    Just a wonderful story and it all revolved around barbecue.
    Definitely need more videos like this.
    Hard hitting with a true to life story and how it revolves where he came from to were he is going.
    Really liked this video.

      I was super impressed with your video and it just screamed American way of life in our rural areas and places that might be impoverished.
      Keep up the good work on these types of videos. I love to see other parts of America and how barbecuing and food and the way of life come together in different ways to enrich people’s lives in very different ways. Shows a good amount of contrast between how we live in different areas and it shows how food and the ways of life go together.
      I’m rambling a bit but I wanted to say how impressed this episode is and definitely want to see more.

    It breaks my heart that towns like this are destroyed by the closing of coal mines! The community support there is second to none! The BBQ looked amazing! The heart he puts into his cooks is impressive!

    Thank you for highlighting Eastern Kentucky and Kentucky in general. Eastern Kentucky is often very stigmatized and there is such a beautiful Appalachian culture in Eastern Kentucky. The community is amazing and they're so overlooked. I was born and raised in Northern Kentucky but went to College in Eastern, KY at MSU. Absolutely fell in love with the area and the surrounding counties. Good hearted, hard-working people. Also, I hope you liked the Ale-8, it's a staple here!!

    Middlesboro KY here, lived in Texas last 30 years. I love seeing my homeland in the background, hearing the familiar accent, and all wrapped around my favorite thing on earth. BBQ!!! For me the taste of the region is the most important ingredient of all, THE WOOD! Love some Texas post oak and mesquite and would love to learn more about your local options.     I'm in Houston Texas and I BBQ a lot for my friends. I'm 54 so I've Seen A lot of techniques, but I really like how you have the smoke going over the top . Bark on the top of those briskets were nice and you don't really need the bottoms to have as much bark. Great video! Now i'm gonna have my next pit built with a wall like that.

    This is great Al. I'm excited about your new channel direction. As a real BBQ geek, I've never heard of this place. You're a natural when meeting new pitmasters and learning from them.     TY for visiting Eastern Kentucky. It is often overlooked and the people in my opinion are some of most discriminated in the country as people assume they are less intelligent and less evolved. Being primarily white in that region they don't get nearly the help from government as other underprivileged groups even though poverty is vast. However, some of the most resourceful, intelligent, and kind people I have met in my vast travels were in Eastern KY.

    I never trim my brisket,I only use salt and pepper,I season my brisket with the smoke my favorite is mesquite and pecan,and throw onion on the coals this is what I call original Texas brisket.When Texans first got here this is how they cooked,it's the best

    As a Harlan County descendant, I like the way China's next 5 year plan is to develop their interior to reduce poverty. This is by transplanting industry from their east coast and improving rail and road links, while also injecting state credit. No company stores where the people are paid in company script, to maintain corporate dependencies. A lot of our history is not written down, but is discussed around the kitchen table. Glad to see a draw for out of town money to come in and circulate.

      @BehindTheFoodTV It's an old perspective, but we Americans have amnesia. Example: TVA built dams and electrified the region. This infrastructure was funded by state credit. Booker T. Washington wanted greenbacks (Treasury Money), to inject into black neighborhoods in the south, and build up black colleges. The greenbacks were to be sticky and circulate in the local region, promoting small business and family enterprise.

    Born and raised in eastern KY now living in FL My wife and I make 2 yearly trips, and we ALWAYS hit up multiple BBQ places. Mutton is my personal favorite.

    Thanks for all the background about the area and how they are hanging on. What type of wood are they using from the area? Yes for that Grandma Fried Chicken, fried chicken is one of my favorites foods. That custom designed smoke does give a totally different look to the finished product on the bottom. What kind of sauce does East Kentucky use? How were those wings? What is the real taste difference between KY and Tx BBQ?, is it lighter in smoke taste, not as much bark? Sure glad you stopped in this BBQ Pitt and bring all the history of the are to us. Really enjoy these schooling videos. I give the seasoning method a try on my pull pork smoke in about two weeks.
