  • Hey Lovely Foodies,
    This is a delicious way to make jackfruit as a meat substitute and it is an easy recipe to add to your meal rotation. Grab a can or two of green jackfruit and some broad bean-along with some pantry essentials and you got yourself a delicious dish.
    WRITTEN RECIPE
    DELICIOUS GREEN JACKFRUIT STEW || VEGAN NOT-OXTAIL
    INGREDIENTS
    🌱 2 can green jackfruit
    🌱 4 sprig thyme
    🌱 5 cloves of garlic
    🌱 1 teaspoon ground ginger or 1 thumb fresh ginger, grated
    🌱 1 tablespoon all-purpose seasoning
    🌱 1 vegetable broth cube, crumbled
    🌱 1 teaspoon browning
    🌱 1 teaspoon soy sauce substitute or soy sauce
    🌱 1 teaspoon onion powder
    🌱 1 tablespoon sugar
    🌱 1 tablespoon oil
    🌱 1 small tomato, chopped
    🌱 ½ green bell pepper, chopped
    🌱 1 onion, chopped
    🌱 1 ½ tablespoon Caribbean green seasoning, optional
    🌱 1 whole scotch bonnet pepper or black pepper
    🌱 1 can butter beans (lima beans)
    🌱 1 cup of water
    🌱 2 tablespoon ketchup
    🌱 salt to taste
    INSTRUCTIONS:
    💚 Rinse Jackfruit and set aside; then wash and chop your vegetable.
    💚 Add jackfruit to a bowl and season with the garlic, onion powder, soy sauce substitute, browning, all-purpose seasoning, vegetable cubes (crumble), ginger, and thyme. Mix well and let marinate for at least 30 minutes.
    💚 Add oil to a pot on medium-high heat; add sugar and allow to brown. **You can skip this step if it feel a little too intimidating.
    💚 Add jackfruit and fry undisturbed for 2 minutes. Turn jackfruit pieces and fry for an additional 2 minutes.
    💚 Mix in onion, tomato, bell pepper, and green seasoning if using; reduce heat to medium-low and cover pot, allow to simmer undisturbed for about 10 minutes. Lower heat if it begins to burn.
    💚 Add water, ketchup, and lima beans
    💚 Taste, taste and taste again; then adjust your seasoning. You can add more soy substitute sauce, or ketchup, or all-purpose seasoning
    Note:
    **I did not add any salt because my all-purpose seasoning contains salt and so did my soy sauce substitute.
    **You can also add black pepper, I personally don’t eat it so tend to not add it to recipe.

    Over the years I have created and curated numerous vegan dishes; but because they were not Caribbean, I was hesitant to share them with you. Shooting videos was even harder since I don't always eat Caribbean food. Kem's vegan kitchen will allow me to share those recipes and create more content.
