      Yes, you can put honey instead of corn syrup.

      G.G.CAKRAFT honey does not have the same components as corn syrup. Liquid glucose is another option

      a very late reply, but you can put it on a pan on low heat and mix continuously until the extra moisture evaporates and the mixture thickens

      To skip that step, simply pass beans through a sieve with a rubber spatula after boiling. This lets the pasty part go through and keeps the skins in the sieve :)
