INGREDIENTS
150 grams of red beans (Amazon Link - geni.us/small-...)
2.5 cups of water
1.5 grams of dried orange peel, optional (Amazon Link - geni.us/orange...)
40 grams of cooking oil
100 grams of brown sugar (Amazon Link - geni.us/brown-...)
1/3 tsp of salt
1/2 tbsp of lime juice
INSTRUCTIONS
Rinse the red beans under running water to wash off the dust. If you see any broken beans, pick them out.
Add the red beans, dried orange peel, and water to an instant pot (or a pressure cooker). Press the porridge button. Use the highest pressure and let it cook for 30 minutes. If you don't have a pressure cooker, soak the red beans overnight. Then add 5 cups of water and simmer the beans for 2.5 hours over low heat.
Pour the beans and the cooking liquid into the blender cup and blend into a smooth puree. Note: try to use as little water as the blender needs. Don't add extra; otherwise, it will take much longer to evaporate the moisture later.
Add the red bean puree, sugar, salt, oil, and lemon juice into a nonstick pot. Stir over medium-low heat for about 20 minutes or until the red bean paste becomes nonstick.
Store the red bean paste in a sealed container. It will stay good for a week in the fridge and three months in the freezer. You can use this red bean paste to make Chinese desserts, such as fried sesame balls, pumpkin mochi bun, salted egg pastry, zongzi, and steamed buns.
I love red bean paste with fresh strawberries. In the spring we will have a bowl of washed and sliced strawberries and I’ll put a blob of bean paste in the middle of the bowl. Just scoop a strawberry and a bit of bean paste and it’s amazing!
Sounds good. When I think of strawberries and red bean, I think of ichigo daifuku, which I was planning to make soon as I just got a couple pounds of strawberries on sale. This is interesting, the Chinese red bean paste. I’m usually making tsubuan, one of the Japanese ones.
@@LePetitNuageGris yes that’s where I got the idea for it! I love ichigo daifuku but it’s a bit tedious to make. So this is the quickest shortcut to a similar flavor. If I had some grilled mochi on the side I bet it would be even better!

I grew up across the street from a place in NYC Chinatown famous for Dai Bow steamed. They also had a popular drink then made with sweeten red beans and condensed milk. The red beans are cooked half the time needed for the paste, then sweeten with cane sugar. Making the drink just need additional crushed ice. The paste needs sugar a vital ingredient in most desserts ? Sweeten to taste of course.

Thank you for showing us your hard work. I love red bean paste pastries of all kinds, but I've never thought about making my own - it never even crossed my mind. I should have a go at this, but I might wait until I've invested in buying a pressure cooker.
My parents married in 1948 - post war migrants to Australia. They had NOTHING and times were REALLY tough but Mum needed a pot to cook for them, could only afford ONE pot, and she bought a pressure cooker. She used it for over 50 years and even packed it when we moved to Canada. When I set up my home a pressure cooker was one of my first purchases and when my daughter moved out we bought her one and she LOVES it! My 2 cents is to get a stove top one - yes the Instapots are VERY convenient and trendy, but if the electrics go, the whole thing is garbage. A stove top pressure cooker can always be used as a regular pot as well and really has nothing to break down - and they're a lot cheaper too. Once you get familiar with how your particular pressure cooker works you quickly adjust cooking times etc. They're all a little different, just like cars and toasters (for example, our toaster always burns the second round so you know to pop the slices out earlier). @@andersonomo597 Thanks for that. I remember my mum had a stove top pressure cooker, but I was too young to understand how they worked. In the end, it ended up, as you said, as just another pan. But, I will look around and see what I can find. I don't particularly want another electric device - I'm running out of work surface!
This recipe uses less oil compared to other recipes. But the yield is a little on the drier side, and I wouldn't mind a touch more sweetness. Thinking of adding some golden syrup to it, in addition to the sugar, but near the end of the cooking process. I'm hoping that the acidity isn't noticeable but hopefully that'll fix the issues I'm having.

Sesame balls will always be my favorite comfort food, we used to go to a buffet by my house that served them year round, and tho they weren’t the best me and my grandmother still loved them and I have always loved it when I would find them at other restaurants, and i think tomorrow will be the first time i try to make them myself and I must thank you for these tutorials on how to make them and how to make the ingredients for them.

Belle’s Bread in Columbus, OH makes red bean donuts. They’re utterly gorgeous! I’m not ambitious enough to try to make those, but red bean buns seem more doable.

There's a really easy way to manage the last step, if you have time. Put the blended bean paste in a 325F (160C) oven in a bigger pot so there's a lot surface area. Stir it every 30 minutes. It usually takes only about 3 times (90minutes) to reach a very dense texture. No sore arms!!! (BTW this trick works for apple butter, too)

Just made it.... resting in fridge. Im attempting chocolate mooncakes. So I added 4tbsp of cacao powder. 2tsp vanilla essence. a few drops concentrated almond essence. Plus 50g extra sugar, the cacao adds bitterness. Considering adding dried cranberries or coconut 🤔

Is this the same Red Bean Paste that the Japanese use in their Mochi? I love Mochi and Sesame Balls. Being a military brat I live in Japan where I had my first Mochi. I was an adult in my 50s when I found Sesame Balls at a very nice Chinese restaurant in California. I went back about a month later and they had stopped serving them! I was so disappointed. I have always wanted to learn and make these items. Now with your help I will be able to! Thank you for your willingness and talent to teach us!

but I decided to explore and added a couple of table spoons of farmer cheese and the same mount of butter. And you know, for me it was not bad🤔. But I made a mistake when I added vanilla powder - the taste of bean got lost after that😕.

Wouldn't it easier and faster if you drained the cooked beans? It seems that you would go directly to the 3rd stage of cooking if you didn't have the extra liquid. I have never used these kinds of beans but if you were able to smoosh them with your fingers i'm sure it would be very easy to do the same with the drained ones using a potato masher or something.
U lose flavour draining it. You can use a bit less water for cooking
I think beans get out a lot of substance into water during cooking

Can I substitute mung beans for the red beans? I've got a bag of green mung beans bought for Indian food that never really got made and am looking for a use.
Whelp... I took the plunge and bought new beans and spent my day off making this. It did take me all day, but the good news is that the recipe doesn't seem to suffer if you need to take it off the heat and take a short break. (I was taking five minute breaks every 20 or so minutes in the last stages) it turned out delicious.
In other news, I might need to do this again for the treats I meant to make because I stayed up all night and used this entire batch to make taiyaki with the new pan I bought.

Just like adding sugar to miso, it kills the taste.
That is way too much effort for red bean paste made with vegetable oil. Much easier to just buy it in a can from Asian markets. I would however have to make my own if I wanted the better tasting kind made with lard. Yum yum! But still a huge amount of effort. Try lard instead of vegetable oil if you want a better tasting red bean paste!
