When they bring you the seafood in the bag, tie the bag at the open end. The open the bottom of the bag and let the sauce drip to what was the open end. The bottom of the bag gets the most sauce, so doing what I just said, allows the top part of the bag get more sauce/seasoning!

In Seattle, they (used to?) have a place in Pike's Market that did something similar to this, they gave you wooden mallets for the shells, everything was just poured onto butcher paper on the table and everyone just grabbed.
