The lob serve is definitely used. Matt Wright uses it. Steve Dawson too. It changes pace. In the video CJ breaks down the mechanics and benefits of the lob serve. Hope this helps.
Hi, I hope this isn’t a stupid question, but recently I was serving in a pickleball game, just open play at a local court, and an opponent questioned whether I was serving legally. I don’t try to make a big or powerful serve ever, I simply hold the ball out in front of my body and with the frying pan method (I’m right-handed), hit the ball out of my left hand to serve. I don’t toss the ball in the air and I’m not putting any downward force on the left hand serving the ball. I simply make contact, below my waist with the ball to the paddle. The opponent says it’s illegal because I am doing “no” toss at all, is he correct? Thank you for any information regarding this question, because I do not see anything in the rules stating my service is illegal.
There are never any stupid questions. The rules don't say that you have to "toss" the ball. Here's what they say 4.A.5. The serve shall be made with only one hand releasing the ball. While some natural rotation of the ball is expected during any release of the ball from the hand, the server shall not impart manipulation or spin on the ball with any part of the body immediately 4.A.6. In officiated matches, the server’s release of the ball must be visible to the referee and receiver. In matches without a referee, the server’s release of the ball must be visible to the receiver. There is no fault if the release is not visible to the referee or receiver. Sounds like if that was the only observation your serve is legal

That's one of the issues with the serve rules is that to the naked eye it appears illegal but it is in fact legal. Do a stop at 2.22. If you look at rule 4.5.A and the picture on the next page you'll be able to see the difference.

On all Tony's serves it looks as if he is tossing the ball up. I thought that was illegal. Yes?
Good eye. Yes Tony does have a little toss. There's no rule on the serve toss as long as contact is made below the waist.

Your serve is not legal. You are serving with the paddle above your wrist.
