After the final knead from the machine, you advised to put the dough into refrigerator for 30mins. Can I just leave in the refrigerator for more than 30mins or till the next day only I take out the dough and divide it? Following with the filling, shaping and proofing. Lastly bake them.

I tried the upgrade bakery sausage roll. Using the exact measurement, the dough turned out a bit dry and not very soft. What could be the reason?

Thanks for another mouth-watering recipe! 😋. How many rolls can the recipe make (just wondering how many sausages to buy)? Also, thought one of the rules for baking is to keep the yeast and salt separate in the mix as salt inhibits yeast action 🤔
Around 20 sausage rolls, depending on how thick is your bread dough for each roll. Separate salt when using fresh yeast, not instant yeast.
Perfect my next task is this better than puff pastry... Also less messy when biting into them as puff pastry like we all know goes everywhere when biting into it

30 minutes in the fridge is to relax the gluten, and for people who work slow when making bread rolls. After the sausages are wrapped with the bread dough, you only need 1 x proofing before brush with egg wash, then in the oven.

I was thinking the same thing
My guess is that the dough had to be refrigerated next. So maybe it had to do with condensation and plastic. Maybe or maybe not at all
