It is really good, spicy but good . Add to a little cream cheese and crackers and it’s amazing! Or on burgers …. We are so glad to have you here and hope you enjoy our shows !!!
I’m not sure how it would effect the flavor & color of the final product. I have never done this in any pickled recipe to I would be unsure of the outcome .
I suppose u could, I am just trying to teach proper canning techniques. In the past I’ve done that before with some things but I try and do most everything in waterbath for the recommended time, just for peace mind .

Can I use mustard powder? And celery powder?

No salt? A brine by definition is a liquid with a lot of salt dissolved in it. What you have there is a syrup.
