as a Mexican griller at a family-owned birria restaurant, let me just say I haven't ate a birria torta in months cause I'm so freakin tired of them but this made me drool and I'm actually excited to go back to work and try and make it like this

I think I'll actually make this one, I'm not gonna make the bread myself (I hate baking) but apart from that it's a pretty damn simple recipe. The meat takes a hot minute but honestly most of that time is just it simmering
This is a recipe I won’t sleep on and you honestly should try it if you got the time because this is heaven just judging from the cheese crust and birria if you’ve had both before you know marrying them is match made in heaven

So we had to carry water from somewhere in the forest to our house - it was such a stressy time and your videos gave me back joy and hope. I think Weissman tries to make it as authentic as possible based on the ingredients he has access to. A lot of Mexican food can't be duplicated easily in the USA due to the use of a lot of very localized ingredients in the original version.

Also chef Kenji is a very respectful chef in the field, I know this is in Josh's comment section, I just think it's a great channel 👌

Worcestershire is easy when you realize that the first half of the letters are pronounced as "worst" not "wor-cest." So it's worst-er-sher.

About ten years ago I asked my pops if I were to start a strictly pulled pork sandwich spot, because there was an abundance of healthy pig and I wanted to do something outside the norm. He immediately shot me down, told me the people out there aren't ready for change. That's in jalisco so maybe Baja Cal, it was always slowy evolving because of how close it is the the states. Now is a really good time to do something different out in Central Mexico, the youth is helping with the fusion of traditional and new.

Native south Texan here. As you might expect I eat Mexican food almost every meal. I usually don't like tortas. However, this particular torta has potential to change my mind looking forward to making it! 🔥🤙

If I had a food truck, this is all we would make, and I would be a billionaire.
Seriously though this crazy-ass, amazing fucking sandwich is just perfect for the food truck concept, which often has gimmicky sandwiches nowhere near as well conceived as draws. It would be this sandwich, plates of scratch-made nachos, and all the money you could fit in a giant, Uncle Scrooge-esque vault.
I think if I made this sandwich, I would need to go run a 5k like, immediately, or else I'd never get up from the table again.
If you spend 6 hours making a sandwich from scratch you just know it's gunna be a banger
@@yellowusbrickus4821 Batching it out would work really well too. You could easily have a five gallon pot of birria and beef going for most of the day, the bread is super easy to make from scratch or you could just partner with a local bakery, sauce is easy. Cut avocado and lettuce all mise’d out. All you’d need to do is fry the cheese to order and assemble.

I like to do a similar cheese crust on quesadillas. So good. It works in a carbon steel pan, btw. Never sticks.
