I have since smoked it (a little closer to jerky) and ate a couple pieces but the thin strips in the brine and a heavy 4 hour hickory smoke theyre potent. Im going to tame em down by makin the remaining smoked fish into a dip with this recipe. Thanks !

When the white protein leaks out of the salmon, that indicates overcooking which makes it dry. Best to stop the cooking process before this happens if you want it succulent.
I was about to say the same thing on the white protein leak. The white protein usually comes out once the salmon has reached a temperature of 145 F. You can usually cook/smoke the salmon until it reaches 125 F. Good dip recipe

There is no sense wasting money on that Wasabi paste. Any Wasabi you can get at the grocery store is fake, it’s just horseradish with food coloring. Real Wasabi is very expensive, and has to be freshly ground because it loses it’s flavor very quickly. Just get a small jar of ground horseradish instead. Horseradish keeps for months and has lots of other uses like making cocktail sauce or I love it along with steak, roast, or of course prime rib.
Every Sunday I watch Steve's videos for at least an hour, my happy hour😊

Outstanding. I used smoked northern pike and it was out of the park good. Has anyone tried freezing a portion of the batch?
I wonder if I can smoked the salmon and freeze it to make the dip another day or if freezing the smoked salmon will change the texture
Unfortunately, this dip isn't one you can freeze. Once you thaw it out again, the texture is all wonky and just doesn't hold up.

It leaks from cooking at too high of heat. Smoke it at 170 or below.
