    Kindly assist with measurements using a 10inch cake pan and a 8inch cake pan please. Especially for the fruit cake to then be a little tall like that

      I usually do one big mixture and distribute accordingly. I fill pans about three quarter way. Pans 4 inches deep. For 6 inches deep cakes, I usually bake 2 layers and stack together. If that is what you are asking.

      Fruit cake tends to be bumpy. A layer of marzipan before fondant creates a crumb coat so that our fondant lands on a smooth surface.

      @@doraschama3174 You can use ganache if the fruit cake is to be eaten within a few days. Marzipan is suitable for fruit cakes especially when people want to keep it for long. Also the nutty flavor goes well with fruit cakes. Some bakers apply 2 layers of fondant.
