I really appreciate that you have a different rag for milk and for drip tray, your attention to having utensils as clean at possible. How do you recommend serving the “extra hot” order with whole milk, considering it becomes bad tasting after 63C ?
I heard a trick is to warm the cup/mug by rinsing the inside with hot water and then dialing in, make the coffee as per usual. Wondering if this was true?

Thanks buddy! I just make it extra hot, there’s nothing we can do if a customer wants it extra hot.

flat white just means a latte but no foam, straight up steaming the milk, no air whispers.
he just made lattes and called them something else
What the first guy said is right but also it is served in a different glass so the milk - espresso ratio is different.
