@urrain261 the foam of the milk comes from the milk fat and the taste of the milk come from the protein of the milk. The amount of the milk he drop off is just some foam (fat) of the milk. And he was not wasting it. Bro you just don't exactly know the life of barista. He is doing his job with full passion 😊

Very good video, one question why do you waste so much milk?? Thank You ❤❤
Might be that some of the jugs are too big to steam a small amount of milk in for a regular coffee - you want some depth in the jug when steaming good milk and if the jug is too big and wide you will need to waste some milk to add some depth so it isn’t too shallow for the steam wand.
But yeah, he does waste a fair amount of milk.
