Calçots with Romesco Sauce

    Calçots or green onion
    2 medium paprika (300g) or canned Piquillo peppers
    2 medium tomatoes (300g)
    1 whole head of garlic
    1/4 cup bread crumbs
    1/4 cup almonds (40g)
    1/4 cup hazelnuts (35g)
    1t Smoked paprika powder (Pimentón Dulce)
    2 Ñora Pepper / optional
    1/2 cup olive oil
    1T sugar
    1/2t salt
    2T Jerez (Sherry) Vinegar
    1. Place paprika, tomatoes, and garlic on a pan, sprinkle with olive oil, and bake in an oven preheated to 200 degrees for 30 minutes, then cover the outside for about 10 minutes to peel the skin.
    2. Roast almonds and hazelnuts in a dry pan until brown.
    3. Add the prepared ingredients, bread crumbs, smoked paprika powder, olive oil, sugar, salt, and vinegar and grind with a mixer.
