#38 A Refreshing and Sweet Pickle for Hot Summer Days, Spreewälder Gewürzgurken from Germany

  • These days, the heat is already intense at the beginning of summer. So this time, I've brought you a recipe for making cucumber pickles. It's a simple dish where you just pour the pickling solution over fresh cucumbers, making it perfect for summer. However, it took some time to complete the video due to the repeated process of pickling and tasting.
    And from this video onward, I've added voice narration. The music site I usually use, Artlist, recently launched a new service that converts subtitles into voice. Although it's still in beta, I decided to give it a try since it's a service I've always wanted. I used to have to repeatedly record and delete audio files whenever I wanted to add voice explanations. Now, I can just use this convenient service without the embarrassing battle with myself. It feels like a wonderful, convenient world has arrived quickly.
    This time, I visited Spreewald, located near Berlin, Germany. This place is quite famous as a cucumber-producing region in Europe. The soil is moist due to the many wetlands, and the warm sunlight shines down, creating an ideal environment for growing cucumbers, especially when summer arrives and this combination reaches its peak. I found crunchy pickling cucumbers (Einlegegurke) being sold, so I used them to make the pickles.
    For the pickling solution, a ratio of water:sugar:vinegar(5%)=3:1:1 was perfect for my taste, and 1 tablespoon of salt per liter of the solution was just right. When making pickles, make sure to use a container that allows for plenty of pickling solution. The pickling solution should fill about half of the container's volume.

    [🥣Ingredients]
    Water:Vinegar = 3:1:1
    1kg pickling cucumbers
    3 cups (750ml) water
    1 cup (250ml) white vinegar (5% acidity)
    1 cup sugar
    1 tablespoon salt
    40g shallots or onions
    Bay leaves
    Dill
    2 tablespoons pickling spices
    (mustard seeds, allspice, juniper berries, cloves, whole black peppercorns)

    1. Sterilize the jar in boiling water for 10 minutes.
    2. Place spices, cucumbers, onions, bay leaves, and dill into the jar.
    3. Mix water, sugar, and vinegar in a 3:1:1 ratio, bring to a rolling boil, and pour the hot brine directly into the jar containing the cucumbers and spices.
    4. Let it mature at room temperature (in summer) for 3 days, then transfer to the refrigerator and enjoy :)
