    Boiling with salt and baking soda instead of just sitting in ice water will break down the pectin in the potato which will actually allow it to crisp up in the oven

    I JUST made these and they were DELICIOUS! The only differences from mine was different seasonings and after you flip the wedges, I baked them for 25 mins instead of 20. So delicious and crispy!

    This is how my dear Mum made her chips always. She cut washed and dried them thoroughly in a clean tea towel before shallow frying in dripping. Served with fish and salad. So beautiful.

      @@Ena48145 trust me this recipe and tricks yield the best eveeeeer crispy potato wedges
      4 large potatoes cut into equal-sized wedges
      Boil potatoes for 6 minutes in the following mixture after washing well trying to remove some of the potato starch
      For the boiling water you’ll need
      6 cups water
      1-1/2 teaspoons baking soda”enhances the crunchiness”
      1-1/2 teaspoons salt
      1 spring thyme or rosemary
      1 whole garlic clove
      After boiling for 6 minutes let potatoes cool down completely and dry them with paper towels as we don’t need any moisture
      then transfer to a big bowl and add
      A splash of olive oil or “melted ghee for a better crisp”just enough to coat the wedges”don’t add too much oil or the spices and semolina will not stick”
      Then add
      1 teaspoon cornstarch mixed with your fav spice blend” I use smoked paprika,onion salt, garlic powder,chili powder & a pinch of dried thyme” and after coating well
      Then finallly add 1 tablespoon semolina making sure you add it gradually so it sticks to the potatoes but don’t keep at the bottom of the bowl..and if needed add a splash of oil or ghee again just to help semolina stick”don’t add too much semolina as we don’t want it to form a thick layer over our potatoes
      Let it sit for a while till you melt 3 tablespoons ghee in a baking tray for 15 mins in a 400F preheated oven
      The ghee or oil should be hot when you transfer your potato wedges to the tray”this makes them crispier”
      Make sure not to overcrowd the tray and bake for 30 min then flip over and bake for 20 and you’ll be left with the best potato wedges ever!!

      What if you dont dry them? I let em sit in water for about an hour then drained the water but transfered them to a gallon ziplock an poured in the oil an season and mixed up that way but the wedges were still wet why does that matter??

    If you rinse the freshly cut wedges in cold water then par boil for 2 mins, plunge into cold water immediately after, then follow the instructions for drying and cooking as you've said, you can eliminate the 30 mins ice water wait. 😉

    Don't add the salt until the end! Salt draws out moisture, giving you soggy potatoes. This goes with all potatoes when baking them, salt once they're done

    Yumm, one of my favorite go to foods! If you want a really crispy potato, my new go too recipe is basically cut potatoes into wedges, season with whatever seasonings you prefer, sprinkle a little bit of corn startch all over the potatoes, mix well so every potatoe is coated with seasonings and corn starch, then coat with olive oil, mix again and place on wire rack and air fry for about 30 minutes on 400°. Seriously so delicious! No flipping needed, perfect and crispy every time! Fail proof recipe!!! Sometimes, instead of olive oil, I will wrap my potatoe wedges with bacon strips and this also is such a delicious way to make potatoe wedges in the air fryer. Sweet potatoe wedges are also delicious in the air fryer. Hope you give these a try. The air fryer is my new best friend! Hope to see more air fryer recipes in the near future on your channel. 😋🥰🤗
